Preheat the Blackstone grill over medium high heat (approximately 350 degrees Fahrenheit) and set up a cooler zone on the Blackstone grill.
Mix 2 Tablespoons of the butter into the ground beef.
Divide the beef into 4 even patties. Season with the salt and pepper. Refrigerate for at least 30 minutes.
Spread 4 tablespoons of the butter on both sides of the hamburger buns (approximately 1 tablespoon per bun). Place them on the grill and let the buns toast slightly (approximately 1 minute) and then set aside.
Melt the remaining butter on the Blackstone grill. Add the chopped onions and sauté until soft (approximately 5 minutes). Move the onions to the cooler side of the grill and let cook for a few more minutes until the onions start to brown.
Spread the oil onto the grill or griddle in the hot zone.
Place the patties on the grill and gently press them down into thinner patties with either a burger press or large spatula. Let the patties cook for 3 minutes without moving them.
Flip the patties and do not press them back down or it’ll release on the flavorful juices in the burger. Allow them to cook on the other side for 1 minute until cooked through.
Place a slice of cheese on top of each patty and allow for it to melt (20-30 seconds).
Top each of the patties with 1/4 of the sautéed onions. Remove from the grill and place on the toasted buns.
Serve immediately while warm and enjoy!
