Ingredients

For the Chili:

  • 1 pound ground beef
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 14 oz. Diced tomatoes
  • 6 oz. tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper optional
  • Salt and pepper to taste

For the Burgers:

  • 1 pound ground beef
  • Salt and pepper to taste
  • 4 slices American cheese
  • 4 Tablespoons Queso cheese dip
  • 1/2 cup crispy onion strings
  • 4 hamburger buns

Instructions

For the Chili:

  • In a large pot, cook 1 pound of ground beef over medium heat until browned. Break the meat apart with a spatula as it cooks.
  • Add the finely chopped onion and minced garlic to the pot with the beef. Cook for 3-4 minutes until the onion is translucent.
  • Stir in the diced tomatoes, and tomato paste.
  • Add the beef broth, chili powder, ground cumin, paprika, and cayenne pepper (if using). Season with salt and pepper.
  • Bring the mixture to a simmer. Reduce the heat to low and let the chili cook for about 20-25
  • minutes, stirring occasionally. The chili should thicken as it cooks.
  • Taste and adjust seasoning if necessary. Set aside.

For the Burgers:

  • Preheat the grill or stovetop griddle to medium-high heat.
  • Divide 1 pound of ground beef into four equal portions and form into patties. Season both sides with salt and pepper.
  • Grill the burgers for about 4-5 minutes per side for medium doneness, or until they reach your
  • preferred level of doneness.
  • In the last minute of cooking, place a slice of American cheese on each burger to melt.
  • Lightly toast the hamburger buns on the grill or griddle.

To Assemble:

  • Place the grilled burger with melted cheese on the bottom bun.
  • Spoon a generous amount of the prepared chili over each burger.
  • Drizzle each with 1 tablespoon of Queso cheese dip.
  • Top with crispy onion strings.
  • Cover with the top bun and serve immediately.

Notes

The chili should be thick enough to spoon onto the burgers without making the bun too soggy. If the chili is too thin after cooking, let it simmer uncovered for a few additional minutes to reduce and thicken.
