Ingredients

For the Burgers:

  • 2 pounds Lean Ground Beef
  • 2 Chipotle Peppers from a can of chipotles in adobo Finely chopped
  • 2 Tablespoons Adobo Sauce from the can of chipotles in adobo
  • 1 Tablespoon Oil
  • 1 1/2 teaspoon Salt
  • 3/4 teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Cumin

For the Chipotle Sauce:

  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/2 Lime juiced
  • 1 Chipotle Pepper in Adobo Sauce
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon Salt
  • For Serving:
  • 6 Slices Pepper Jack Cheese
  • 2 Ripe Fresh Avocados sliced
  • 6 Lettuce Leaves
  • 2 Tomatoes sliced
  • 6 Hamburger Buns
  • 2 Tablespoons Butter for the buns

Instructions

  • Divide the ground beef into 6 even balls (approximately ⅓ lb each). Then form the balls into patties that are approximately 4 inches wide and 1 inch thick.  Place the patties in the refrigerator (covered in plastic wrap) while you preheat the grill.
  • Place all the chipotle sauce ingredients in a food processor and blend until smooth and creamy.  Refrigerate while you prepare the burgers.
  • Preheat the Grill over medium high heat (approximately 450-500 degrees F). Rub oil on the grill grates to prevent the patties from sticking to the grill.
  • Season the patties with salt, pepper, garlic powder and ground cumin.
  • Place the patties on the grill over direct heat.  Cook for 4-8 minutes (flipping the patties halfway through the cook time) depending on how you like your burger cooked (see notes).  Use an instant-read meat thermometer to make sure that the burgers are cooked to your preference.
  • Add the cheese to the patties for the last minute of the cook time to melt the cheese.  Remove the patties from the grill.
  • Butter the buns and place them on the grill and cook for 1 minute until they are browned slightly.  Watch them closely so that they do not burn.
  • Spread the chipotle sauce onto the bottom bun.  Then top with lettuce, a patty, tomato and sliced avocados.
  • Serve immediately while warm and enjoy!
