Foil Pack Sweet Potatoes

These grilled sweet potatoes taste amazing in this delicious foil pack sweet potato recipe.

Ingredients

  • 2 lbs Sweet Potatoes - Peel and cut into small cubes
  • 3 Tablespoons Butter
  • 2 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Garlic Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Preheat a grill over medium high heat (approximately 350 degrees Fahrenheit).
  • Wash the sweet potatoes and dice them into approximately 1 inch size cubes.
  • Evenly place the potatoes into 3 large pieces of aluminum foil large enough to fold over and to be able to roll up edges.
  • Stir together all the seasonings in a small bowl and sprinkle the seasoning mixture on top of the potatoes on the foil.
  • Top each packet of potatoes with 1 tablespoon of butter.
  • Fold each foil packet close and seal tightly.
  • Place the packets on the grill and close the grill.
  • Cook for 20-30 minutes, flipping the packets halfway through the cook time, until the potatoes are tender and slightly browned.
  • Remove the heat, be careful when opening the foil packet and enjoy!

Notes

You also also bake these in the oven at 350 degrees F for 30-40 minutes until the potatoes are tender.  
Refrigerate the leftovers in an airtight container for up to 5 days.
