Ingredients

For the Chicken and Marinade:

  • 2 large boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Kabobs:

  • 1 red bell pepper cut into 1-inch pieces
  • 1 green bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 large red onion cut into chunks
  • 1 zucchini sliced into 1/2-inch thick rounds
  • 10-12 cherry tomatoes
  • Wooden or metal skewers

Instructions

  • In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken cubes and toss to coat. Cover and refrigerate for 1 hour to marinate.
  • Preheat grill to medium-high heat.
  • Prepare bell peppers, onion, zucchini, and cherry tomatoes.
  • Thread chicken and vegetables alternately onto skewers.
  • Grill kabobs for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.

Notes

Chicken: Using boneless, skinless chicken breasts ensures quick cooking and easy eating. Thighs can be used for more moisture and flavor but may require slightly longer grilling.
Skewer Tips: If using wooden skewers, soaking them in water prevents burning. Metal skewers are a reusable alternative that conducts heat, potentially speeding up the cooking process.
Grill: Keeping the grill at a medium-high heat allows for a good sear on the outside of the chicken while cooking it through without burning. Turn the kabobs regularly for even cooking.
