- Large Boneless Skinless Chicken Breasts, cut the chicken into 1-inch cubes
- Extra-Virgin Olive Oil
- Fresh Lemon Juice
- Cloves Garlic, minced
- Dried Oregano
- Dried Thyme
- Salt and Black Pepper, to taste.
For the Kabobs:
- Red Bell Pepper, cut into 1-inch pieces
- Green Bell Pepper, cut into 1-inch pieces
- Yellow Bell Pepper, cut into 1-inch pieces
- Large Red Onion, cut into chunks
- Zucchini, sliced into 1/2-inch thick rounds
- Cherry Tomatoes
- Wooden or metal skewers
