Greek Chicken Kabobs Ingredients - chicken, olive oil, lemon juice, garlic, oregano, thyme, salt and pepper, bell peppers, red onion, zucchini, cherry tomatoes, skewers

For the Chicken and Marinade

  • Large Boneless Skinless Chicken Breasts, cut the chicken into 1-inch cubes
  • Extra-Virgin Olive Oil
  • Fresh Lemon Juice
  • Cloves Garlic, minced
  • Dried Oregano
  • Dried Thyme
  • Salt and Black Pepper, to taste.


For the Kabobs:

  • Red Bell Pepper, cut into 1-inch pieces
  • Green Bell Pepper, cut into 1-inch pieces
  • Yellow Bell Pepper, cut into 1-inch pieces
  • Large Red Onion, cut into chunks
  • Zucchini, sliced into 1/2-inch thick rounds
  • Cherry Tomatoes
  • Wooden or metal skewers

Variations Ideas

  • Change Meat – We used chicken breast for these kabobs but you can also use chicken thighs or chicken tenders. You can also use beef, lamb, or pork.
  • Marinade – Feel free to change the ingredients to the Greek Marinade. Add in red wine vinegar, Greek Yogurt, or fresh herbs.

Combine olive oil, lemon juice, red wine vinegar, garlic, oregano, thyme salt and pepper

Step 1 – In a bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, thyme, salt, and pepper.

Step 2 – Add chicken cubes and toss to coat. Cover and refrigerate for 1 hour to marinate chicken. Preheat grill to medium-high heat.
