- 4 Boneless skinless Chicken Breasts
- 1 cup Barbecue Sauce
- 1 can Pineapple Slices in Pineapple Juice 15 oz can
- 1 Tablespoons Soy Sauce
- 1 teaspoon Minced garlic
- 1/4 cup Olive Oil
- Green Onions sliced (for serving)
In a bowl, whisk together the barbecue sauce, juice from the can of pineapple slices, soy sauce, minced garlic and olive oil.
Place the chicken breasts in a large ziplock bag or a bowl. Pour half of the marinade over the chicken. Reserve the other half of the marinade and refrigerate.
Allow the chicken to marinate for at least 30 minutes or overnight.
Then preheat the grill to 350 degrees F. Gently brush the grates of the grill with the oil to prevent the chicken from sticking.
Place the chicken on the grill. Cook for 5-7 minutes per side until the chicken reaches an internal temperature of 165 degrees F. Grill the pineapple slices next to the chicken for 2-3 minutes per side until the pineapple is charred slightly.
Then remove the chicken from the grill. Brush the chicken with the reserved marinade. Let the chicken rest for 5 minutes.
Serve the chicken with the pineapple slices topped with the green onions and enjoy!
Use an instant-read meat thermometer to make sure that the chicken is cooked to a safe temperature before enjoying.
