Grilled Peach Cobbler

FOR THE COBBLER:
- 6 Large Peaches pitted and halved
- ½ cup Brown Sugar
- 2 Tablespoons All Purpose Flour
- 1 teaspoon Ground Cinnamon
- ⅛ teaspoon Ground Nutmeg
- ¼ teaspoon Salt
- 2 Tablespoons Unsalted Butter
FOR THE BISCUIT TOPPING:
- 1 cup All Purpose Flour
- ¼ cup Brown Sugar
- 1 ½ teaspoons Baking Powder
- ½ cup Heavy Whipping Cream
- ¼ cup Unsalted Butter melted
Preheat the grill over medium high heat (approximately 400 degrees F). Place the peaches on direct heat on the grill and cook them for 5 minutes (flipping them halfway through the cook time) with the lid closed.
Remove the peaches from the grill and allow them to cool enough to be able to handle. Then slice the peaches into thin slices and place them in a large bowl. Add the rest of the cobbler ingredients except for the butter to the bowl and stir until all the ingredients are thoroughly combined and the peaches are coated.
Then pour the mixture into a cast iron skillet. Cut the butter into small pats of butter and place them over the top of the peaches in the skillet. Cover with aluminum foil and place the pan on the grill. Close the lid on the grill and allow it to cook for approximately 15 minutes until the peaches are tender.
While the peaches are cooking, prepare the biscuit topping. In a mixing bowl, whisk together the flour, sugar and baking powder. Then mix in the heavy whipping cream and melted butter. Mix until a dough is formed.
Remove the foil from the cast iron skillet. Dollop the biscuit topping on top of the peaches covering as much of the top of the peaches as possible. Cover the grill (make sure the foil is off the pan) and cook until the biscuit topping is browned (approximately 12-15 minutes).
Remove the cobbler from the grill. Let the cobbler sit for at least 10 minutes. Then it’s ready to serve topped with vanilla ice cream and enjoy!
Refrigerate any leftovers in an airtight container for up to 5 days.
You do not need to peel the peaches when slicing them.
