Grilled Peppers and Onions

Ingredients

  • 4 Large Sweet Bell Peppers any color
  • 1 Yellow Onion
  • 2 Tablespoons Olive Oil
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions

  • Preheat a grill over medium high heat until it reaches approximately 350 degrees Fahrenheit.
  • Cut the peppers and onion into large pieces and remove the seeds from the peppers.
  • Add the cut onions and peppers to a mixing bowl.  Drizzle the olive oil on top.  Gently toss to coat them with oil.
  • Place the peppers directly in the grill grates on the grill.
  • Close the lid, cook for 3-5 minutes until the peppers are charred.
  • Flip them over and cook the other side for an additional 3-5 minutes.
  • Remove the peppers from the grill.  Season with salt and pepper. Serve warm and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 4-5 days.
