Grilled Red Potatoes

Ingredients

  • 1 1/2 lbs Red Potatoes cleaned and quartered
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 teaspoons Italian Seasoning

Instructions

  • Preheat a grill over medium high heat (approximately 400-450 degrees F).
  • Wash and dry the red potatoes. Cut them in half and then in half again to quarter the potatoes.
  • Place the potatoes in a large mixing bowl. Drizzle the oil on top and sprinkle the seasoning on top of the potatoes.
  • Toss the potatoes to coat them in the oil and the seasoning mixture.
  • Place the potatoes on a large piece of foil. Try to spread them out into a single layer on the foil. Cover the potatoes with another piece of foil and seal the edges to create a foil packet. Gently poke the top of the packet a few times with a fork to allow the heat to escape from the packet.
  • Transfer the foil packet to the grill. Cover the grill and cook for 10-15 minutes until the potatoes start to brown. To check, carefully lift a corner of the top piece of foil with tongs and check on the potatoes.
  • Once the potatoes are starting to brown, carefully flip the entire foil packet of potatoes on the grill and cook for another 5-10 minutes until the potatoes are fork tender.
  • Carefully remove the potatoes from the foil packet (be careful as they will be hot) and then the potatoes are ready to serve while warm and enjoy!

Notes

If the red potatoes are larger, cut the quarters into small pieces so that they cook evenly and quickly. 
Refrigerate any leftovers in an airtight container for up to 5 days. 
To Make in the Oven: Preheat the oven to 400 degrees F. Place the potatoes on a baking sheet and bake for 35-40 minutes, tossing them approximately every 10 minutes, until the potatoes are tender and golden brown.
