Ingredients

  • 4 Boneless Center Cut Pork Chop thick cut
  • 8 oz Cream Cheese softened
  • 1/2 cup Shredded Parmesan Cheese
  • 1 cup Spinach chopped
  • 1/2 tsp Thyme Leaves
  • 2 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  • Preheat the grill over medium-high heat to 400 degrees F. Rub the grill grates with olive oil to keep the 4 boneless center cut pork chops from sticking.
  • Gently cut a pocket into each of the 4 boneless center cut pork chops lengthwise to the fat line for the filling.
  • In a small bowl, mix together 8 oz cream cheese, 1/2 cup shredded Parmesan cheese, 1 cup chopped spinach, 1/2 tsp thyme leaves, and 2 tsp oregano. The mixture will be thick.
  • Stuff each of the 4 pork chops evenly with the cream cheese mixture and close the edges of each pork chop with 2 toothpicks.
  • Season the outside of the 4 stuffed pork chops with 1 tsp salt and 1 tsp pepper.
  • Place the 4 stuffed pork chops directly on the grill grates and grill for 2 minutes per side. Then move the pork chops to indirect heat or the upper rack and grill for 10 to 15 minutes, until the pork reaches an internal temperature of 145 degrees F.
  • Remove the pork to a plate, let it rest for 5-10 minutes. Then serve warm and enjoy!

Notes

Watch the pork carefully while it cooks as the cream cheese will get soft and some might run out while cooking.
Use an instant read meat thermometer to make sure that the pork chops are cooked to a safe temperature. Make sure to insert the meat thermometer into the pork and not the filling when checking the internal temperature.
