Ingredients

  • 8 boneless skinless chicken thighs
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon grated ginger
  • 2 cloves garlic minced
  • 1 teaspoon ground coriander
  • 1/2 teaspoon red chili flakes adjust to taste
  • 2 tablespoons vegetable oil

Instructions

  • In a large bowl, whisk together soy sauce, honey, lime juice, fish sauce, grated ginger, minced garlic, ground coriander, and red chili flakes to create the marinade.
  • Add the chicken thighs to the marinade. Ensure each piece is well coated. Cover and refrigerate for at least 1 hour.
  • Preheat the grill to medium-high heat. Brush the grill grates with vegetable oil.
  • Remove the chicken from the marinade and shake off excess. Grill the chicken thighs for about 10 minutes on each side, or until they are cooked through and have nice grill marks.
  • Allow the chicken to rest for a few minutes before serving.

Notes

Marinating time can be extended for more flavor, but avoid marinating for over 4 hours as the lime juice can start to 'cook' the chicken.
Ensure your grill is properly preheated and oiled to prevent sticking and achieve good grill marks. Keep an eye on the chicken to prevent charring, as the honey in the marinade can cause it to burn more easily.
