- 1 Medium Seedless Watermelon 2 1/2-3 pounds
- 2 Limes juiced and zested
- 1/4 cup Honey
- 1 teaspoon Kosher Salt

Preheat a grill to high heat (approximately 450-500 degrees Fahrenheit).
In a small bowl, whisk together the lime juice, lime zest, honey and salt. Set aside.
Cut the watermelon into 2 halves. Then cut each half into quarters and cut the watermelon into triangle pieces that are approximately 1-1 1/2 inch thick with the rind on the watermelon still attached.
Brush the lime mixture onto both sides of the watermelon triangles and place them directly on the grill on the grill grates.
Cook for 2-3 minutes per side until you see grill marks on the watermelon and it’s slightly soft.
Remove from the grill.
Remove the watermelon from the grill and then serve topped with the fresh cilantro and feta cheese.
Enjoy!
This is best served immediately off the grill while warm.
This recipe makes approximately 20 watermelon wedges and will serve roughly 6 people for a delicious appetizer or dessert.
