Ingredients

  • 1 pound Skirt Steak sliced into thin strips
  • 1 cup BBQ sauce
  • 1 can Pineapple Slices in Pineapple Juice 15 oz can
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 teaspoons Minced Garlic
  • 1/2 teaspoon Ground Ginger
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 tablespoons Avocado Oil
  • Chopped green onions for garnish

Instructions

  • In a medium size mixing bowl, stir together the BBQ sauce, juice from the can of pineapple slices (reserve the pineapple), soy sauce, honey, minced garlic, ginger, salt and pepper.
  • Reserving some of the sauce. Pour approximately 1/2 cup of the sauce into a small bowl, cover and refrigerate.
  • Place the beef in a large bowl or ziplock bag and pour the remaining sauce over the beef.
  • Let the beef marinade for at least 4 hours or overnight in the refrigerator.
  • Preheat the Blackstone grill to medium-high heat (around 400°F).
  • Drizzle the avocado oil onto the griddle and use a spatula to spread it around.
  • Remove the beef from the marinade and discard the excess liquid. Place the beef on the Blackstone grill and cook for 2-3 minutes per side until the beef is cooked to your desired doneness.
  • While the beef is cooking, place the pineapple rings on the griddle. Cook the pineapple for about 1-2 minutes on each side, or until lightly charred and heated through.
  • Remove the beef and pineapple rings from the Blackstone grill.  Baste them immediately with the reserved sauce.
  • Let the beef rest for at least 5 minutes.
  • Serve the beef over rice topped with the pineapple rings and chopped green onions.  Enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 5 days.
Since the beef is sliced thin, it does cook quickly so watch it closely once it’s been added to the Blackstone grill.
You can use any oil with a high smoke point in this recipe instead of the avocado oil.  Vegetable oil, canola oil and coconut oil are all great options.
