- 4 Slices Bacon diced
- 1/2 Small Red Bell Pepper diced
- 1/4 Onion diced
- 2 Tablespoons Butter
- 6 Large Eggs
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1/2 cup Shredded Cheddar Cheese
Preheat the Blackstone Grill over medium heat (approximately 350 degrees Fahrenheit).
Add the Bacon, peppers and onions to the grill. Sauté for 3-5 minutes until the bacon is cooked through and the onions and peppers are tender.
Then push the mixture to one side of the grill.
Add the butter to the grill and use a spatula to spread it around.
In a small bowl, whisk together 3 eggs.
Slowly pour the mixture onto the griddle and use your spatula to act as a barrier to make sure that the eggs do not spread out too wide.
Then place half of the bacon and vegetable mixture into the center of the eggs. Top with half of the shredded cheese.
Then carefully start to fold the egg onto itself and roll it up. Carefully move the omelette to the side to let it finish cooking.
Continue the same process to make the 2nd omelette on the griddle.
Once they are cooked through, the omelettes are ready to serve and enjoy with your favorite toppings!
These are best served fresh, but you can refrigerate them for up to 3-4 days.
