Preheat your grill over medium high heat (approximately 350-400 degrees F).
Mix the hot Italian sausage and mild Italian sausage together with your hands in you a large bowl. Then form them into 6 patties that are approximately 1/3 pound each.
Use your middle finger to make an approximately 2 inch indentation into the center of each of the patties to prevent them from puffing up when they are grilled.
Place the patties on the grill over direct heat. Cook for 4-5 minutes without moving the patties.
Flip the patties and grill the other side of the patties for 4-5 more minutes until the patties are cooked through. Place the cheese on the patties for the last minute of the cook time.
Place the hamburger buns on the grill for 1 minute to warm and toast the buns slightly.
While the patties are cooking, heat the oil in a large skillet over medium high heat. Add the peppers and onions. Season with salt and pepper.
Sauté the peppers and onions until they are just tender (approximately 7-8 minutes).
Remove from heat. Serve the patties on the toasted buns topped with the pepper and onion mixture. Enjoy!
These are best served fresh off the grill.
Leftovers can be refrigerated in an airtight container for up to 3-4 days.
