Mexican Fried Rice

Ingredients

For the Rice:

  • 1 Tablespoon Oil
  • 1 teaspoon Minced Garlic
  • ½ Onion finely diced
  • ½ Red Bell Pepper diced
  • 1 cup Black Beans drained and rinsed
  • 1 cup Corn
  • 4 cups Cooked Rice

For the Sauce:

  • ½ cup Red Enchilada Sauce
  • ½ teaspoon Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoon Paprika
  • 1 teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions

  • Whisk together the sauce ingredients in a mixing bowl.  Set aside.
  • Preheat the Blackstone grill over medium high heat (approximately 400 degrees Fahrenheit).
  • Drizzle the oil onto the grill and spread it around with a spatula.
  • Add the minced garlic, diced onions and red bell pepper to the grill and sauté until the onions are translucent (approximately 2-3 minutes).
  • Add in the corn and black beans.  Cook for 1 minute until they are heated through.
  • Then toss in the cooked rice and the sauce mixture.  Stir thoroughly to coat all the ingredients with the sauce. Sauté for 2-3 minutes until all the ingredients are heated through.
  • Remove from the grill.  Serve immediately while warm and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 5 days.
