Mexican Pizza

Use your Blackstone Griddle to make this Blackstone Mexican Pizza. Quick and easy meal idea and served with your favorite toppings.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 1 pound Ground Beef
  • 1 Tablespoon Taco Seasoning
  • 1/2 cup Water
  • 12 Taco size Flour Tortillas
  • 1 can Refried Beans 15 oz
  • 1 can Red Enchilada Sauce 10 oz
  • 2 cups shredded Mexican Cheese
  • 1/2 cup Sour Cream
  • 1 tomato diced
  • 2 Green Onions sliced
  • 1 cup of Black Olives sliced

Instructions

  • Preheat the Blackstone Grill over medium high heat to 400 degrees Fahrenheit.
  • Spread the vegetable oil onto the grill and spread it around with a spatula.
  • Add the ground beef to one side of the griddle.  Brown the beef and break it apart as it cooks.
  • Season the beef with the taco seasoning.  Pour the water on top and gently toss to coat the beef with the taco seasoning.
  • While the beef is browning, warm the tortillas by placing them on the other side of the Blackstone Grill.
  • Microwave the refried beans to make them easier to spread.
  • Top with a layer of the refried beans on half of the warmed tortillas and then top with the taco meat.
  • Then place the other tortilla on top. Place some of the red enchilada sauce on top of the 2nd tortilla and place shredded cheese on top. Continue this process until all the pizzas are assembled.
  • Cover the pizzas with a dome or close the lid on the Blackstone Grill.  Cook until the bottom tortilla is crispy and the cheese on the Mexican pizzas is melted.
  • Carefully remove from the griddle.
  • Serve topped with the sour cream, tomatoes, green onions and black olives. Slice and enjoy!

Notes

Refrigerate any leftovers for up to 2 days.
