Preheat the Blackstone Grill over medium high heat to 400 degrees Fahrenheit.
Spread the vegetable oil onto the grill and spread it around with a spatula.
Add the ground beef to one side of the griddle. Brown the beef and break it apart as it cooks.
Season the beef with the taco seasoning. Pour the water on top and gently toss to coat the beef with the taco seasoning.
While the beef is browning, warm the tortillas by placing them on the other side of the Blackstone Grill.
Microwave the refried beans to make them easier to spread.
Top with a layer of the refried beans on half of the warmed tortillas and then top with the taco meat.
Then place the other tortilla on top. Place some of the red enchilada sauce on top of the 2nd tortilla and place shredded cheese on top. Continue this process until all the pizzas are assembled.
Cover the pizzas with a dome or close the lid on the Blackstone Grill. Cook until the bottom tortilla is crispy and the cheese on the Mexican pizzas is melted.
Carefully remove from the griddle.
Serve topped with the sour cream, tomatoes, green onions and black olives. Slice and enjoy!
