Onion Smash Burgers

Onion Smash Burgers cook with such flavor on the Blackstone Griddle. The beef patties are cooked with crispy edges and juicy center.

Ingredients

For the Burger Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

For the Burgers:

  • 2 pounds ground beef
  • 2 large onions finely sliced
  • 8 slices American cheese
  • 4 brioche buns
  • Salt and pepper to taste
  • Butter for the buns

Instructions

  • Mix all burger sauce ingredients in a bowl. Refrigerate until ready to use.
  • Heat a Blackstone grill to medium-high heat. Mix the burger sauce ingredients together while the grill is preheating and refrigerate until ready to use.
  • Divide beef into 8 equal portions (4 ounces each), loosely roll into balls.
  • Add sliced onions on top of each of the ground beef balls, season with salt.
  • Immediately smash thin with a large spatula. Cook 2-3 minutes until crispy edges form.
  • Flip burgers and place cheese on all patties. Stack 4 of the patties on top of the other 4 patties.
  • Butter and toast buns on the griddle.
  • Assemble the burgers by spreading burger sauce on both buns and adding the double-stacked patties. Enjoy!

Notes

Make sure the onions are finely sliced so that they cook quickly and evenly.  
Make sure to smash the beef balls firmly and immediately after placing them on the griddle. This will help you achieve the thin, crispy edges typical of smash burgers.
Using parchment paper between the spatula and the beef can prevent sticking if needed.
