Anytime we have friends and family over, we make smash burgers. Everyone can add their favorite toppings and they cook so fast that makes dinnertime a breeze.
Even when we can’t cook this burger on the Blackstone, I love to cook in a large cast iron skillet for the same flavor and texture.

How to Make Onion Smash Burgers
Step 1 – Mix all burger sauce ingredients in a bowl. Refrigerate until ready to use.
Step 2 – Heat a Blackstone grill to medium-high heat. Divide beef into 8 equal portions (4 ounces each), loosely roll into balls.
Step 3 – Add sliced onions on top of each of the ground beef balls, season with kosher salt.
Step 4 – Immediately smash thin with a large sturdy spatula or a burger press. Cook 2-3 minutes until crispy edges form.
Step 5 – Flip burgers and place a slice of American cheese on all patties. Stack 4 of the patties on top of the other 4 patties.
Step 6 – Butter and toast burger bun on the griddle. Assemble the burgers by spreading burger sauce on both top bun and bottom buns and adding the double-stacked patties. Enjoy!
Expert Tips
- Onions – Make sure the onions are finely sliced so that they cook quickly and evenly.
- Cooking Patties – Make sure to smash the burger balls firmly and immediately after placing them on the griddle. This will help you achieve the thin, crispy edges typical of smash burgers. Using parchment paper between the spatula and the beef can prevent sticking if needed.
- Serving Burgers – We like to serve these burger patties with the caramelized onions right off the griddle. Cooking on the large surface allows me to cook several at once.
What to Serve with Smash Burgers?
These smash burgers are delicious served with Frozen French Fries on Blackstone, Blackstone Sweet Potato Fries or Grilled Broccolini.
I like to also have all of our favorite burger toppings such as yellow mustard, lettuce, tomatoes, pickle relish, pickles, mayo, and ketchup. Everyone can add their favorite topping for the best smash burger for a delicious meal idea.
