Pineapple Teriyaki Chicken

- 2 pounds chicken breast cut into 1-inch pieces
- 1 red bell pepper diced
- 1 onion diced
- 2 cups fresh pineapple diced
- 2 tablespoons vegetable oil
For the Sauce:
- ¼ cup Brown Sugar
- ½ cup Low Sodium Soy Sauce
- ¼ cup Rice Vinegar
- ¼ cup Honey
- 2 teaspoons Minced Garlic
- ½ teaspoon Ground Ginger
- 1 Tablespoon Cornstarch
- For Serving: Sliced green onions and sesame seeds optional.
Preheat Blackstone griddle to medium-high heat.
In a bowl, whisk together the sauce ingredients.
Add the vegetable oil to the griddle and cook the chicken, stirring occasionally, until nearly cooked through, about 5-7 minutes.
Add the bell pepper, onion, and pineapple to the griddle. Continue cooking for 3-4 minutes until the vegetables start to soften.
Pour the soy sauce mixture over the chicken and vegetables. Cook for a few minutes until the sauce thickens and coats everything evenly.
Remove from heat and top with sliced green onions and sesame seeds. Serve warm and enjoy!
Allow the chicken to brown slightly on the griddle before adding the vegetables and sauce. This is great served as is or over rice as well.
Refrigerate any leftovers in an airtight container for up to 5 days.
