Why We Love This Recipe

This incredibly flavorful teriyaki chicken dish is a family favorite. It is always on the menu and makes dinnertime a breeze. I love that we can add in a tbsp of red pepper flakes and black pepper or sriracha to make it a little spicy.

This meal cooks in less than 30 minutes and it is perfect to feed a crowd.

Ingredients

Ingredients - chicken breast, red bell pepper, onion, fresh pineapple, oil, brown sugar, soy sauce, rice vinegar, honey, minced garlic, ground ginger, cornstarch
  • Boneless Skinless Chicken Breast – Cut into 1-inch pieces. You can also make with boneless skinless chicken thighs
  • Red Bell Pepper, Onion and Fresh Pineapple – Dice veggies and pineapple chunks into small pieces. We like to us a food chopper so they are evenly cut.
  • Vegetable Oil – Use any high smoke point oil
  • Teriyaki Sauce Ingredients – Combine ingredients in a bowl. I even like to add in pineapple juice and a tsp of apple cider vinegar adds the perfect amount of tartness. You can even use store bought teriyaki sauce or making gluten-free by coconut aminos instead of soy sauce.
  • Teriyaki Chicken Toppings – Sliced green onions and sesame seeds is optional

How to Make Pineapple Teriyaki Chicken

  • Step 1 – Preheat Blackstone griddle to medium-high heat.

Step 2 – In a bowl, whisk together the sauce ingredients.

Step 3 – Add the vegetable oil to the griddle and cook the chicken, stirring occasionally, until nearly cooked through and juices run clear, about 5-7 minutes.

Step 4 – Add the bell pepper, onion, and pineapple to the griddle. Continue cooking for 3-4 minutes until the vegetables start to soften.

Step 5 – Pour the soy sauce mixture over the chicken and vegetables. Cook for a few minutes until the sauce thickens and coats everything evenly.

  • Step 6 – Remove from heat and top with sliced green onions and sesame seeds. Serve warm and enjoy!

  • Prepare Chicken – Cut the chicken in about the same size pieces to ensure that the chicken cooks about the same time.
  • Cooking Chicken – Allow the chicken to brown slightly on the griddle before adding the vegetables and sauce. Cooking time will vary depending on size of your chicken. Continue stir the chicken as it cooks to ensure that it cooks thoroughly.

How to Make Teriyaki Chicken on this Stovetop

If you do not have a Blackstone or would prefer to make this delicious recipe indoors, you can easily making it in a large pan or a cast iron skillet.

  • Heat the teriyaki sauce in a small saucepan with ½ cup soy sauce and minced garlic cloves. We like to bring to a boil when adding in the cornstarch slurry to think the glaze.
  • Cook the bite-size pieces of chicken in a preheated large skillet with oil for about 5 minutes.
  • Then add in chopped veggies and cook until vegetables are softened. Pour the teriyaki glaze over the cooked chicken and veggies in a skillet. Heat until the mixture thickens.

Then serve the teriyaki chicken with sesame seeds and chopped onions.
