My entire family loves these Chicken Bacon Ranch Quesadillas as it combines all of our favorite ingredients all cooked in a flour tortilla.
Ingredients

- Vegetable Oil – I used vegetable oil in this recipe but any oil with a high smoke point will work great. Avocado oil, coconut oil or canola oil would work great in this recipe.
- Bacon – You can also use bacon that is already cooked
- Chicken Breast – Diced into small pieces. Feel free to also use boneless chicken thighs
- Garlic Powder – Feel free to substitute with garlic salt
- Ranch Dressing – You can use homemade or store bought
- Cheddar Cheese – For best results shred cheese from bulk cheese
- Large Flour Tortillas – Feel free to make with corn tortillas or tortilla of your choice.

Variations Ideas
- Additions – To add more flavors, feel free to add in chopped onions, bell peppers, or slice mushrooms. We have even squeezed fresh lime over the chicken while cooking.
- Chicken – This is a great recipe to make with leftover grilled chicken. You can also use rotisserie chicken for an easy substitution.
- Cheese – This quesadillas can be made with a variety of cheeses. Feel free to make with Monterey Jack Cheese, pepper jack, or colby jack cheese.
- Seasoning – If you prefer not to use ranch dressing, you can substitute with ranch seasoning mix and sprinkle on the chicken as your are cooking.
How to Make Chicken Bacon Ranch Quesadillas
- Step 1 – Preheat the Blackstone griddle over medium heat (approximately 400 degrees F).

Step 2 – Place the bacon strips directly on the griddle and make sure that they are not touching. Cook the bacon for 3-5 minutes per side (depending on the thickness of the bacon) until the bacon is cooked to the crispiness that you prefer.

Step 3 – While the bacon is cooking, place the chicken onto the Blackstone grill in an even layer in a separate location from the bacon. Sprinkle it with salt, pepper and garlic powder.

Step 4 – Sauté the chicken for 3-4 minutes per side until it’s browned slightly. Continue to cook the chicken until it’s cooked through (internal temperature of 165 degrees F) for approximately 3-4 more minutes.

Step 5 – Place the tortillas on the grill. Top each tortilla with a small amount of the shredded cheese, then layer the chicken, crispy bacon and drizzle 1 tablespoon of ranch dressing on top and then add more cheese. Carefully fold each tortilla in half making a half moon shape to allow cheese to melt.

Step 6 – Cook until one side of the tortilla is golden brown (1-2 minutes). Flip with a Blackstone Spatula and then cook until the other side is golden brown as well (1-2 minutes). Watch them closely as they brown quickly.

Step 7 – Remove the quesadillas onto a cutting board. Slice them into wedges and then they are ready to serve topped with fresh cilantro and enjoy!
Expert Tips
- Cooking Bacon – Only flip the bacon once using tongs during this cooking process. You will know that the bacon is ready because the white fat on the bacon will become translucent and the pink parts of the bacon will be a reddish-brown color.
- Prepare Blackstone – Before cooking the bacon, make sure to preheat for the best results. This also helps to create the best crispy texture on the quesadilla and melty cheese center.
- Cooking Time – While cooking the quesadillas, watch them closely as it only takes a few minutes on each side. You want to make sure that the quesadilla does not burn.
- Frying Pan – These quesadillas can easily be made indoors with a large skillet or cast iron skillet. Heat the skillet and cook the bacon and the quesadilla according to the recipe card.
