Ingredients

Ingredients needed - chicken breast, avocado oil, red wine vinegar, honey, minced garlic, italian seasoning, salt and pepper, red onion, zucchini, squash, red bell pepper, lemon
  • Boneless Chicken Breasts – Approximately 2-3 chicken breasts
  • Avocado Oil – You can also use extra virgin olive oil.
  • Minced Garlic – Learn How to Mince Garlic
  • Italian Seasoning – Learn How to Make Homemade Italian Seasoning
  • Red Onion – Cut into 1 inch pieces
  • Zucchini – Sliced into ½ inch slices
  • Yellow Squash – Sliced into ½ inch slices
  • Red Bell Pepper – Feel free to use Green Bell Peppers

Variations Ideas

  • Change the Vegetables – Any type of vegetables are great on the kabobs. Make sure they are sliced the same sized pieces so they cook evenly. Green peppers and mushrooms are a great suggestion.
  • Change the Meat – You can easily use steak, skinless chicken thighs or pork for this recipe. Or use all three on the kabobs. They options are endless when making kabobs.
  • Add other seasoning – Use different spices or a dry rub on the pork kabobs. I also like to add soy sauce to the marinade for extra flavoring.

How to Make Chicken Kabobs on Blackstone Griddle

Step 1 – Prepare Chicken – Cut the chicken into 1-2 inch bite size pieces. Stir together the olive oil, vinegar, honey, garlic, Italian seasoning, salt and pepper.

Step 2 – Chicken Kabob Marinade – Marinade the chicken pieces with the sauce ingredients either in a bowl or a large ziplock plastic bag. Marinade for at least 30 minutes but no more than 2 hours as the vinegar will break down the chicken.

Step 3 – Prepare Kabobs with meat and vegetables – Prepare the kabobs by threading the chicken and veggies onto the wooden skewers.

Step 4Continue Adding – Add until all the chicken and veggies are on the skewers. I add until skewers are full.

  • Step 5 – Place kabobs on grill. – Place the kabobs on the grill for approximately 20-25 minutes (turning every few minutes to cook evenly) until the chicken reaches an internal temperature of 165 degrees F. The veggies should also be tender and slightly golden brown.
  • Step 6 – Remove from Grill – Remove the kabobs from the Blackstone grill to a serving plate and serve the lemon over the top of the kabobs.
  • Step 7 – Serve and enjoy – Serve warm and enjoy.

Recipe Tips

  • Oil – When oiling the Blackstone, make sure to use an oil with a high smoke point so that it does not burn.  Avocado Oil, Vegetable Oil, Coconut Oil or Canola Oil all work great on a Blackstone grill.  
  • Meat Thermometer – Use an instant-read meat thermometer to make sure that the chicken is cooked to safe temperature before eating.  Also that this chicken is no longer pink.
  • Flip the Kabobs – Makes sure to flip the grilled chicken kabobs as you cook them to make sure all sides are cooked.
  • Skewers – We used wooden skewers instead of metal skewers. Make sure to soak the skewers in water for at least 20 minutes.

How Long to Cook Chicken Kabobs

Cooking the chicken kabobs on the Blackstone doesn’t take long. After oiling the griddle, place the chicken on the griddle. Grill the chicken for about 20 minutes. Make sure to frequently turn the chicken as it cooks.

  • 1 pound boneless chicken breasts approximately 2-3 chicken breasts
  • 1/4 cup Avocado Oil
  • 1/4 cup red wine vinegar
  • 2 tsp honey
  • 1 Tbsp minced garlic
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 red onion cut into 1 inch pieces
  • 1 zucchini sliced into ½ inch slices
  • 1 yellow squash sliced into ½ inch slices
  • 1 red bell pepper deseeded and cut into 1 inch pieces

Instructions

  • Cut the chicken into 1-2 inch pieces. Whisk together the olive oil, vinegar, honey, garlic, Italian seasoning, salt and pepper.
  • Marinade the chicken with the sauce ingredients either in a bowl or a large ziplock bag. Marinade for at least 30 minutes but no more than 2 hours as the vinegar will break down the chicken.
  • Soak the skewers in water for at least 20 minutes.
  • Preheat the Blackstone grill to a medium low heat. 
  • Rub oil onto the Blackstone grill so that the kabobs do not stick to the grill. 
  • Prepare the kabobs by threading the chicken and veggies onto the wooden skewers until all the chicken and veggies are on the skewers.
  • Place the kabobs on the grill for approximately 20-25 minutes (turning every few minutes to cook evenly) until the chicken reaches an internal temperature of 165 degrees F and the veggies are the tenderness that you prefer.
  • Remove the kabobs from the Blackstone grill to a serving plate and serve the lemon over the top of the kabobs.
  • Serve warm and enjoy!
