We love chicken tacos and we have loved how fast and easy it is to cook on our new Blackstone Griddle. There are many ways we can use the Mexican blend chicken.

We can top the chicken in a tortilla, serve over rice or make our favorite quesadilla recipe. This chicken comes out tender, juicy and amazing flavor.

Ingredients

Ingredients needed to make this recipe which includes chicken breast, limes, oil, garlic, cumin, chili powder, salt and pepper, cilantro, corn tortillas, avocado and red onion.

Variations Ideas

  • Tortillas – We used corn tortilla but you can also use flour tortillas. It is even great by itself.
  • Salsa – You can add salsa to the chicken mixture. This would be great served over rice.
  • Oil Option – I usually use avocado oil, coconut oil or canola oil on the Blackstone grill as they have a high smoke point.

How to Make Chicken Tacos on Blackstone

Step 1 – Prepare Griddle – Preheat the Blackstone Grill over medium high heat (approximately 400-450 degrees F).

Step 2 – Oil Chicken and Add Chicken – Spread the oil out onto the grill. Then place the diced chicken onto the grill on top of the oil.

Step 3 – Add seasoning to Chicken – Season the chicken with the minced garlic, cumin, chili powder, salt and pepper. Toss the chicken on the Blackstone to make sure that the chicken is coated in the seasoning mixture.

Step 4 – Cook Chicken – Cook the chicken until all sides are browned on flat top grill. Make sure the chicken reaches an internal temperature of 165 degrees F (approximately 5-6 minutes per side).

Step 5 – Squeeze lime over chicken – Then top the chicken with the fresh lime juice and half of the chopped cilantro. Toss coat the chicken in the lime and cilantro.

Step 6 – Remove the chicken – from the grill to a plate.

Step 7 – Heat Tortillas – Then place the tortillas on the Blackstone grill and cook them for 1-2 minutes per side until they are warmed and slightly black on each side.

Step 8 – Assemble Tacos – Remove tortillas and then it’s time to assemble the tacos.

Step 9 – Serve and Enjoy – Use 2 tortillas per taco and top each one with the cooked chicken, diced avocado, red onions and the remaining cilantro.

  • 1.5 lbs Boneless Skinless Chicken Breasts diced into 1 in pieces
  • 2 Fresh Limes juiced
  • 2 Tbsp Oil
  • 2 tsp Minced Garlic
  • 1 tsp Ground Cumin
  • 2 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 cup Fresh Cilantro chopped divided
  • 12 Mini Corn Tortillas
  • 1 Large Avocado diced
  • 1/2 Red Onion diced

Instructions

  • Preheat the Blackstone grill over medium-high heat (approximately 400–450 degrees F). Spread 2 tablespoons oil evenly over the grill surface.
  • Place 1.5 pounds boneless skinless chicken breasts, diced into 1-inch pieces, onto the grill. Add 2 teaspoons minced garlic, 1 teaspoon ground cumin, 2 teaspoons chili powder, 1 teaspoon salt, and 1 teaspoon pepper. Toss the chicken on the grill to coat it evenly in the seasoning.
  • Cook the chicken until all sides are browned and the chicken reaches an internal temperature of 165 degrees F (approximately 5-6 minutes per side).
  • Squeeze the juice from 2 fresh limes over the cooked chicken and add ¼ cup chopped fresh cilantro. Toss to coat the chicken evenly.
  • Remove the chicken from the grill to a plate.
  • Place 12 mini corn tortillas on the grill and cook for 1 to 2 minutes per side until warmed and lightly charred.
  • Assemble the tacos using 2 tortillas per serving. Fill each with the cooked chicken, then top with 1 large avocado diced, ½ red onion diced, and the remaining ¼ cup chopped fresh cilantro.
  • Serve immediately and enjoy.
