What is Teriyaki?

Teriyaki is a way of cooking your meat, vegetables or fish in a glaze sauce. The sauce ingredients usually include soy sauce, rice vinegar and sugar. This vegan recipe is perfectly cook in this delicious glaze on the griddle or in a large skillet.

The sauce ingredients combined make the perfect sweet and savory sauce.

Teriyaki Vegetable Stir Fry Variation Ideas

  • Oil – You can use any oil with a high smoke point for this recipe. Vegetable Oil, Coconut Oil or Canola oil can all be used instead of the avocado oil in this recipe.
  • Teriyaki Sauce – You can easily change the sauce or add in ingredients to make it your own. You can substitute the honey for maple syrup or instead of minced garlic use garlic cloves.
  • Add Nuts – This recipe would be delicious with added chopped nuts. We recommend cashews when serving this dish.
  • Change the Vegetables – This recipe is great to use up vegetables that maybe going bad. Toss them in them in with bell peppers and cook to make a delicious side dish.
  • Add Spice – If you prefer your vegetables to be a little spicy add in a ¼ tsp of red pepper flakes. This gives it so much flavor.
  • Add Meat – This recipe can be made in a variety of ways. Feel free to add in chicken, seafood or beef to this recipe.

How to Make Teriyaki Vegetables on a Blackstone Griddle

Step 1 – Heat the Griddle – Preheat the Blackstone grill over medium high heat (approximately 400 degrees F). Spread the avocado oil onto the grill.

Slice mushrooms, white onions, chopped bell peppers, fresh carrots, and broccoli on the griddle

Step 2 – Add Vegetables to Griddle – Add the broccoli and sauté for 3-4 minutes until tender. Then add in the remaining vegetables to the grill. Season the vegetables with the salt and pepper and sauté them for 3-4 more minutes until the vegetables are tender.

Step 3 – Combine Sauce ingredients – In a separate bowl, whisk together the homemade teriyaki sauce ingredients.

Step 4 – Pour this on top of the vegetables on the Blackstone.  Toss to coat the vegetable teriyaki stir with the sauce mixture.  Then cook for just a few more minutes to thicken the sauce.  

  • Step 4 – Serve and Enjoy – Serve topped with the sesame seeds and enjoy. 

Stir Fry Vegetable Recipe Tips

  • Prepare Vegetables – To make this recipe even easier, prepare your vegetables ahead of time. You can place all your chopped vegetables in a air tight container. Then they will be ready to add to the griddle.
  • Prepare Sauce – We like to prepare our teriyaki sauce ahead of time as the longer it marinates the better it taste.
  • Soy Sauce – For best results, we recommend using low sodium soy sauce. You can also substitute for tamari for a gluten free option.
  • Cooking Vegetables – We recommend cooking vegetables until they are tender. These vegetables will only take a few minutes to cook.
  • Thickening the Sauce – If your sauce is not thickening, you may need to mix a cornstarch slurry. Mix cup water with cornstarch and pour on the vegetables.

What to Serve with Teriyaki Vegetables

Teriyaki Vegetables is a delicious side dish or a main dish depending on how you want to serve it. When we make recipes on the flat top I like to make my entire meal on it for easy clean up.

  • Hibachi Noodles These lo mein noodles are seasoned with soy sauce, butter and garlic, brown sugar. This combination gives them so much flavor.
  • Fried Rice We love this fried rice recipe has all the ingredients blend well with the teriyaki seasoning and vegetables. Serving over rice is my favorite way to enjoy these teriyaki vegetables. We even serve over brown rice.
  • Blackstone Chicken Thighs We love making chicken thighs on the griddle. They cook perfectly and always come out with so much flavor. They serve perfectly with this teriyaki stir fry.

What Vegetables go with Teriyaki Chicken

If you are adding chicken to your teriyaki vegetables, feel free to change the vegetables. These are some of my favorite options.

  • Edamame

In this recipe we recommend using fresh vegetables. If using frozen vegetables whether on the griddle or stovetop can turn a bit soggy.

  • 1/2 Yellow Onion sliced
  • 5 Carrots peeled and cut into strips
  • 1 Red Bell Pepper diced
