Sausage and Peppers Foil Pack

- 1 pound Sweet Italian Sausage Links
- 2 cups Baby Red Potatoes quartered
- 1/2 Yellow Onion sliced
- 3 Bell Peppers sliced - any colors
- 1 Tablespoon Minced Garlic
- 1/4 cup Olive Oil
- 2 Tablespoons Italian Seasoning Mix
- 1/3 cup Grated Parmesan Cheese for serving
- Fresh Parsley chopped for serving
Preheat the grill over medium high heat (approximately 450 degrees Fahrenheit).
Cut 4 large pieces of heavy duty foil into approximately 12X12 inches and spray the foil into non-stick cooking spray.
Slice the sausage links into approximately 1/2 inch thick slices. Toss together the sausage, potatoes, onions, bell peppers and minced garlic into a large mixing bowl.
Drizzle the olive oil on top and sprinkle the Italian seasoning mix on top. Gently stir to coat all the sausage and vegetables with the olive oil and seasonings.
Evenly divide the mixture into the center of each piece of foil and top each one with butter. Then fold up the edges of the foil around the food to create a closed packet.
Place the foil packets on the grill over direct heat. Grill for 15-20 minutes (flipping halfway through the cook time) until the potatoes are fork tender.
Remove from heat. Be careful when opening the foil packs. Top with the grated Parmesan Cheese and fresh chopped parsley. Serve immediately while warm and enjoy!
Make sure to use heavy duty foil so that it doesn’t break when making this recipe.
You can also use fingerling potatoes or Yukon gold potatoes as well. Just make sure to dice them into smaller pieces so that the potatoes are done at the same time as the sliced peppers.
Refrigerate the leftovers in an airtight container for up to 5 days.
