  • Andouille Sausage
  • Baby Red Potatoes (quartered) 
  • Yellow Onion (sliced) 
  • Green Bell Peppers (sliced – any colors) 
  • Minced Garlic
  • Olive Oil 
  • Italian Seasoning Mix 
  • Grated Parmesan Cheese (for serving) 
  • Fresh Parsley (chopped for serving)

Variations Ideas

  • Potatoes – You can also use fingerling potatoes or Yukon gold potatoes as well. 
  • Veggies – Feel free to change the vegetables to what you prefer. We suggest adding in carrots, zucchini, red bell pepper, tomatoes and broccoli. Green Beans is also a great addition.
  • Sausage – There are many different sausages to choose from at the grocery store. You can use chicken sausages, turkey sausage, and if summer sausage. Their options are endless on the meat you can add.
  • Sheet Pan – If you prefer not to use tin foil, feel free to place all the ingredients on a baking sheet to bake in the oven.

Step by Step Instructions

  • Step 1 – Preheat the grill over medium high heat (approximately 450 degrees Fahrenheit).
  • Step 2 – Cut 4 large pieces of heavy duty foil into approximately 12X12 inches and spray the foil into non-stick cooking spray.

Step 3 – Slice the sausage links into approximately ½ inch thick slices.  Toss together the sausage, potatoes, sweet bell peppers and onions and minced garlic into a large bowl. 

Combining the ingredients

Step 4 – Drizzle the olive oil on top and sprinkle the Italian seasoning mix on top.  Gently stir to coat all the sausage and vegetables with the olive oil and seasonings.

Step 5 – Evenly divide the mixture into the center of each piece of foil and top each one with butter. Then fold up the edges of the foil around the food to create a closed packet.

Step 6 – Place the foil packets on the grill over direct heat.  Grill for 15-20 minutes (flipping halfway through the cook time) until the potatoes are fork tender.  

  • Step 7 – Remove from heat.  Be careful when opening the foil packs.  Top with the grated Parmesan Cheese, salt and pepper and fresh chopped parsley.  Serve immediately while warm and enjoy!  

Recipe Tips

  • Sheet of Foil – Make sure to use heavy duty aluminum foil so that it doesn’t break when making this recipe. 
  • Cutting Veggies – Just make sure to dice them into smaller pieces so that the potatoes are done at the same time as the sliced peppers.
  • Folding foil – Wrap the foil around the veggies and sausage completely for best results. This helps to lock in the moisture to allow all the ingredients to cook evenly.
  • Opening Foil Packets – When you are finish cooking the foil packet meal, carefully open the packet. Steam will come out and it will be very hot.
