Shrimp Tortellini

Shrimp Tortellini makes a quick and easy meal that everyone will love. Tender shrimp and pasta is made with simple spices and is easy to make.

Ingredients

  • 1 Tablespoon Avocado Oil divided
  • 1 pkg Frozen Cheese Tortellini thawed
  • 2 cups Chopped Fresh Spinach
  • 1 Pound Jumbo Raw Shrimp peeled and deveined
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Red Pepper Flakes

For the Sauce:

  • 2 cups Heavy Cream
  • 1/2 cup Salted Butter
  • 1 cup Freshly Grated Parmesan Cheese
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper

Instructions

  • Heat a saucepan over medium high heat (either on a Blackstone grill or on the stovetop).
  • Melt the butter in the pan. Whisk in the heavy cream and bring the mixture to a low boil. Watch closely and simmer for 5-6 minutes.
  • Remove from heat, whisk in the parmesan cheese, garlic powder and pepper until the cheese melted.
  • Preheat a Blackstone grill over medium high heat. Spread half of the oil onto the grill and spread the tortellini into a single layer on the grill.
  • Squirt a little water over the tortellini, cover and cook for 4-5 minutes, flipping halfway through the cook time.
  • Spread the remaining oil onto the grill in a separate place than the tortellini. Add the chopped spinach to the grill over the oil and sauté for a few minutes. Then add in the shrimp. Season with salt, pepper and the red pepper flakes.
  • Stir all the ingredients together and cook for 2-3 more minutes until the shrimp is cooked through and  the spinach is starting to wilt slightly.
  • Drizzle the homemade Alfredo sauce over all the ingredients and toss to coat with the sauce.
  • Remove the mixture from the grill, serve warm topped with fresh parmesan cheese and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 3-4 days. I usually use avocado oil when cooking on the Blackstone grill but any oil with a high smoke point will work.
Vegetable oil and coconut oil are both great options.
