Seafood Recipes is one of my kids favorite recipes. Shrimp Tortellini is loaded with flavor and cooks easily on the Blackstone Griddle or on the stovetop. The shrimp and tortellini is mixed with fresh spinach and a homemade alfredo sauce for a crowd pleasing meal.

Why We Love Shrimp Tortellini

We love making Shrimp Tortellini because of the simple spices and delicious flavor. This recipe is completely customizable by changing the sauce, noodles and spices to what you prefer.

This recipe is on our menu rotation because of how quick and easy it is to make.

Ingredients

Ingredients - Avocado Oil, cheese tortellini, fresh spinach, shrimp, salt, pepper, red pepper flakes, heavy cream, salted butter, parmesan cheese, garlic powder
  • Avocado Oil – Add oil of your choice
  • Frozen Cheese Tortellini – Make sure it is thawed before cooking. Use any flavor of tortellini that you prefer.
  • Chopped Fresh Spinach – Use any veggies that you prefer. We have even added in peas and carrots for a delicious vegetables variations.
  • Jumbo Raw Shrimp – Peeled and deveined – You can also use frozen shrimp
  • Seasoning – Feel free to change the spices that you prefer. We like adding in salt, black pepper, red pepper flakes.
  • Alfredo Sauce – You can use jar alfredo sauce or make Homemade Alfredo Sauce

Variations Ideas

  • Pasta – If you prefer to use a different pasta, try this recipe with rigatoni, penne, spaghetti, or linguini.
  • Sauce – This recipe is delicious with a tomato based sauce or you can even serve it without it.
  • Seasoning – Feel free to add in fresh basil or Italian Seasoning for a delicious variation.
  • Change Meat – If you prefer, you can make this recipe with diced chicken.

How to Make Shrimp Tortellini

Step 1 – Heat a saucepan over medium high heat (either on a Blackstone grill or on the stovetop).  Melt the butter in the pan. Whisk in the heavy cream and bring the mixture to a low boil. Watch closely and simmer for 5-6 minutes.

Step 2 – Remove from heat, whisk in the parmesan cheese, garlic powder and pepper until the cheese melted.

Step 3 – Preheat a Blackstone grill over medium high heat. Spread half of the oil onto the grill and spread the tortellini into a single layer on the grill.

Step 4 – Squirt a little water over the tortellini, cover and cook for 4-5 minutes, flipping halfway through the cook time.

Step 5 – Spread the remaining oil onto the grill in a separate place than the tortellini. Add the chopped spinach to the grill over the oil and sauté for a few minutes.

Step 6 – Then add in the shrimp. Season with salt, pepper and the red pepper flakes.

Step 7 – Stir all the ingredients together and cook for 2-3 more minutes until the shrimp is cooked through and  the spinach is starting to wilt slightly.

Step 8 – Drizzle the homemade cream sauce over all the ingredients and toss to coat with the sauce. Remove the mixture from the grill, serve warm topped with fresh parmesan cheese and enjoy! 

Expert Tips

  • High Smoke Point Oil – I usually use avocado oil when cooking on the Blackstone grill but any oil with a high smoke point will work. Vegetable oil, olive oil and coconut oil are both great options. 
  • Stovetop Cooking Method – If you prefer, you can make Shrimp Tortellini on the stovetop in a cast iron skillet for the similar flavor and texture as if you cooked it on the griddle. Large skillet can also be used.
  • Prepare Griddle – Before cooking the pasta and shrimp on the griddle, we recommend preheating the griddle and adding the oil or melted butter. This prevents the pasta from sticking to the grill.
  • Pasta – If cooking this recipe on the stovetop, you can cook the pasta separately according to package directions then drain in a large pot. It is then ready to mix with the other ingredients.

Frequently Asked Questions

Can I Use Frozen Shrimp?

We think that this recipe is best made with fresh shrimp, but you can use frozen shrimp. If you are using frozen shrimp, make sure to thaw shrimp by running under cold water before mixing with the pasta.

How to Store Leftover Shrimp Tortellini

Store the leftovers in an airtight container for up to 3-4 days in the refrigerator.

How to Reheat Shrimp Tortellini

Reheat the leftovers on the stovetop or in the microwave. Make sure to not overheat so the shrimp doesn’t get rubbery.

For the Sauce:

  • 2 cups Heavy Cream
  • 1/2 cup Salted Butter
  • 1 cup Freshly Grated Parmesan Cheese

Recipe Notes

Refrigerate the leftovers in an airtight container for up to 3-4 days. I usually use avocado oil when cooking on the Blackstone grill but any oil with a high smoke point will work.
Vegetable oil and coconut oil are both great options.
