Preheat a smoker to 225 degrees F with a water pan.
Cut the bacon into small pieces and trim the Brussel Sprouts by cutting the end off and then cut the Brussel Sprouts in half.
Fry the bacon in a large cast iron pan over medium high heat for 4-5 minutes until starting to brown.
Add the Brussel sports to the pan cut side down. Season them with salt and pepper. Cook for the Brussel Sports for 5 minutes until they start to brown. Then stir to toss with the bacon.
Move the cast iron skillet to the smoker. Cook for 45-60 minutes (stirring a few times) until the brussel sprouts are tender and crisp.
Remove from the smoker and the brussel sprouts are ready to serve and enjoy!
