Smoked Brussel Sprouts

Ingredients

  • 1 Pound Brussel Sprouts trimmed and cut in half
  • 1/2 pound Bacon chopped
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  • Preheat a smoker to 225 degrees F with a water pan.
  • Cut the bacon into small pieces and trim the Brussel Sprouts by cutting the end off and then cut the Brussel Sprouts in half.
  • Fry the bacon in a large cast iron pan over medium high heat for 4-5 minutes until starting to brown.
  • Add the Brussel sports to the pan cut side down.  Season them with salt and pepper. Cook for the Brussel Sports for 5 minutes until they start to brown.  Then stir to toss with the bacon.
  • Move the cast iron skillet to the smoker.  Cook for 45-60 minutes (stirring a few times) until the brussel sprouts are tender and crisp.
  • Remove from the smoker and the brussel sprouts are ready to serve and enjoy!

Notes

Refrigerate the leftovers in an airtight container for up to 5-7 days.
