Preheat your smoker to 225 degrees F and rub 1 tablespoon oil on the grates in the smoker to prevent the fish from sticking.
Mix together the seasoning in a small bowl.
Use a basting brush to rub the olive oil onto the Halibut filets.
Season the fish with the seasoning mixture.
Place the fish fillets directly on the grill grates in the smoker.
Smoke for 45-60 minutes until the fish reaches an internal temperature of 140 degrees F.
Remove from the smoker and let the fish rest for 5 minutes and then it’s ready to serve with fresh lemon squeezed on top and enjoy!
Refrigerate any leftovers in an airtight container for up to 3 days.
You will know the fish is done as it will easily flake with a fork.
