  • Preheat your smoker to 225 degrees F and rub 1 tablespoon oil on the grates in the smoker to prevent the fish from sticking.
  • Mix together the seasoning in a small bowl.
  • Use a basting brush to rub the olive oil onto the Halibut filets.
  • Season the fish with the seasoning mixture.
  • Place the fish fillets directly on the grill grates in the smoker.
  • Smoke for 45-60 minutes until the fish reaches an internal temperature of 140 degrees F.
  • Remove from the smoker and let the fish rest for 5 minutes and then it’s ready to serve with fresh lemon squeezed on top and enjoy!

Notes

Refrigerate any leftovers in an airtight container for up to 3 days. 
You will know the fish is done as it will easily flake with a fork.
