Halibut is a mild fish that my entire family loves. We have recently starting using our smoker more and seafood recipes are always on the menu. Halibut smokes easily with simple spices.

How to Make Smoked Halibut

  • Step 1 – Preheat your smoker to 225 degrees F and rub 1 tablespoon oil on the grates in the smoker to prevent the fish from sticking.

Step 2 – Mix together the seasoning in a small bowl.

Step 3 – Use a basting brush to rub the olive oil onto the Halibut filets.

Step 4 – Season the fish with the seasoning mixture.

Step 5 – Place the fish fillets directly on the grill grates in the smoker. 

  • Step 6 – Smoke for 45-60 minutes until the fish reaches an internal temperature of 140 degrees F. 
  • Step 7 – Remove from the smoker and let the fish rest for 5 minutes and then it’s ready to serve with fresh lemon squeezed on top and enjoy!

  • Prepare Halibut – If possible, try to smoke halibut fillets that are about the same size. This will ensure that they cook about the same time and evenly.
  • Meat Thermometer – To make sure that the halibut is fully cooked use meat thermometer to check internal temperature.
  • Cooking Halibut – There is no need to flip the halibut during the smoking process.
  • Wood Chips – Halibut smokes with amazing flavor with different types of wood chips. You can easily use pecan, cherry, or any mild wood for the best flavor.
