Smoked Pineapple

  • Preheat your smoker to 225 degrees Fahrenheit.
  • Peel all the sides off of your pineapple and slice it into thick rings.
  • Mix together the brown sugar, ground cinnamon and salt together in a small bowl.
  • Brush both sides of the pineapple rings with the brown sugar mixture.
  • Place the pineapple rings directly on the smoker grates in the smoke and let them smoke for 45-60 minutes until they are golden brown (watch closely toward the end of the cook time so that they do not burn).
  • Remove from the grill and serve as is or topped with ice cream or honey. Enjoy!

Notes

I like using fruitwood in the smoker for this recipe to give the pineapple an extra sweet and fruity flavor (apple or cherry work best). 
Refrigerate any leftovers in an airtight container for up to 5 days.
