Cooking Korean BBQ Beef on the Blackstone griddle has quickly become one of my favorite ways to bring restaurant flavors home. The sizzle, the aroma, and that perfect caramelization, it’s all part of the fun.

The marinade infuses every bite with rich, sweet-and-savory depth, and the griddle gives you that unbeatable char. It’s a family favorite that’s fast enough for weeknights but impressive enough for guests!

Ingredients

Ingredients - Thinly slices of steak in a bowl with small bowls of oil, sesame seeds and chopped green onions
  • Thinly Sliced Beef Ribeye – You can substitute with sirloin
  • Vegetable Oil – Any cooking oil with a high smoke point can be used for this recipe such as canola oil, peanut oil or avocado oil if you prefer. 

For the Marinade

Ingredients - small bowls of soy sauce, brown sugar, sesame oil, rice vinegar, garlic cloves, ginger, red pepper flakes, and green onions
  • Soy Sauce – You can easily substitute with coconut aminos for a gluten free option
  • Brown Sugar – Adds a hint of sweetness
  • Sesame Oil – See these The Best Sesame Oil Substitute if you are out
  • Rice Vinegar – You can also use mirin
  • Cloves Garlic, minced – or 1 Tablespoon pre-minced garlic
  • Fresh ginger, minced – or ¼ teaspoon ground ginger
  • Red Pepper Flakes – Adds a hint of spice
  • Green Onions – Optional topping

How to Make Blackstone Korean BBQ Beef

Step 1 – In a large mixing bowl, whisk together the marinade ingredients.

Step 2 – Place the sliced beef in the bowl with the marinade and toss to coat the beef with the marinade.

Step 3 – Cover, refrigerate, and allow for it to marinade for at least 30 minutes or up to 4 hours for more flavor.

Step 4 – Preheat your Blackstone grill over medium high heat (approximately 400 degrees F). Spread the vegetable oil onto the griddle.

Step 5 – Spread the marinade beef into an even layer onto the griddle.

Step 6 – Let it sear for 2–3 minutes, then flip and cook another 2–3 minutes until caramelized and cooked through.

Step 7 – Remove from the grill.  Serve warm topped with the sesame seeds and sliced green onions. Enjoy!

Recipe Tips

  • Marinated Beef – Marinating the beef is what gives it its flavor so do not skip this time and allow it to marinate. We recommend marinating for at least 30 minutes.
  • Searing Steak – When cooking the steak, do not toss it regularly. You want each side to get seared. Spread the steak into a single layer and let it sit without touching it. Then flip and sear on the other side as well.  This will give you the best flavor in this steak.  
  • Cooking Steak – Watch the steak closely while it’s cooking, as it’ll cook fast since it’s sliced thinly.  
  • Meal Prep – Make a double batch — it reheats beautifully for quick lunches!

  • Korean BBQ Chicken – Swap beef for boneless chicken thighs for a delicious variations.
  • Spicy Version: Add ½ tsp of chili paste or sriracha for an extra kick of flavor.
  • Vegetable Mix – Grill bell peppers, mushrooms, carrot or onions alongside the beef then mix everything together for an amazing meal idea.
