If you have a garden full of zucchinis then you need to make these Zucchini Fritters. Zucchini recipes are easy to make with simple ingredients. We love fresh zucchini as our side dish with many different meals.

Variations Ideas

  • Cheese – Feel free to add in cheese for added flavor. You can add in cheddar cheese, parmesan cheese or mozzarella cheese.
  • Change Seasoning – The seasoning in this recipe is simple, feel free to change or add in other seasoning. Use fresh herbs such as parsley
  • Pan Fried – Instead of cooking on the Blackstone fry in a cast iron skillet over medium heat until golden brown.
  • Dipping Sauce – We usually serve topped with sour cream, but a ranch dipping sauce it always a family favorite. This Homemade Tzatziki Sauce is also a great dipping sauce.
  • Breading – These fritters would be delicious with panko breadcrumbs.

How to Make Zucchini Fritters on Blackstone Griddle

  • Step 1 – Shred the zucchini with a box grater and place it in a large bowl.  Stir in 1 teaspoon – Salt.  Set aside for 10 minutes.

  • Step 2 – After this time, use your hands to squeeze as much liquid as possible out of the zucchini.  Then place the zucchini in a large mixing bowl. 
  • Step 3 – Then stir in the flour, eggs, green onions, baking powder, remaining salt and pepper.

  • Step 4 – Preheat the Blackstone grill over medium high heat (approximately 350-400 degrees F). 
  • Step 5 – Spread the vegetable oil out onto the Blackstone grill with a spatula. 
  • Step 6 – Scoop the zucchini batter onto the grill using a ¼ cup measuring cup. Gently press the mixture down to flatten out the patties.

  • Step 7 – Cook each of the patties for 2-3 minutes until the fritter is golden browned.  Flip and cook the other side for 2-3 more minutes. Watch them closely as they cook so that they do not burn.

  • Step 8 – Remove from the grill and place on a baking sheet lined with paper towels.  
  • Step 9 – Continue this process until all the fritters are cooked.  
  • Step 10 – Serve topped with the sour cream and enjoy.

Recipe Tips

  • Preparing Zucchini – We used a cheese grater to thinly slice the zucchini with the large holes of a box grater. But you can also use a food processor.
  • Remove Liquid – It is best remove as much liquid from the shredded zucchini for the best fritters. We like to use a kitchen towel for best results.
  • Use Measuring Cup – To ensure that zucchini fritters are about the same size, we recommend using a measuring cup to pour on the griddle.
  • Cooking Time – Cooking time will vary depending on the size of your fritters and the temperature of your griddle.
