Substitutions and Additions
- Change Meat – Feel free to use different types of meat to make this smoked lasagna. We recommend substituting with ground turkey, Italian Sausage, or a mixture of both. This makes a delicious smoked sausage lasagna recipe.

Step by Step Instructions
- Step 1 – Preheat the smoker to 250°Fahrenheit.
- Step 2 – Boil the lasagna noodles according to package instructions until al dente. Drain and set aside.
Step 3 – In a large skillet over medium heat, add the olive oil. Cook the ground beef, onion, and garlic until the beef is browned. Drain excess fat.
Step 4 – Stir in the marinara sauce, Italian seasoning, salt, and pepper. Simmer for about 10 minutes.
Step 5 – In a medium bowl, combine together the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, the egg, and fresh basil.
Step 6 – Spread a layer of meat sauce on the bottom of a 9×13-inch aluminum foil pan. Place 3 lasagna noodles on top to begin assembling the lasagna.
Step 7 – Spread half of the ricotta mixture over the noodles, followed by another layer of meat sauce. Repeat layers, ending with a layer of meat sauce on top.
Step 8 – Sprinkle the remaining mozzarella and Parmesan cheese mixture on top. Cover the pan tightly with aluminum foil.
- Step 9 – Place the pan in the preheated smoker and cook for 2.5 to 3 hours. Cook until the lasagna is heated through and the flavors have melded.
- Step 10 – Remove the foil and cook for an additional 15 minutes to allow the cheese to brown slightly.
- Step 11 – Remove from the smoker and let rest for 10 minutes before serving.

- Foil Cover – The lasagna is covered with foil for most of the cooking time to retain moisture. Removing the foil earlier or later could affect moisture retention and browning of the cheese.
- Resting Time – The lasagna is rested for 10 minutes post-smoking to let the juices redistribute.
- Noodles – You will need to cook the lasagna noodles before layering in the disposable baking dish.
- Pellet Grill – We used a wood chips smoker to make this recipe, but you can also make it in a pellet grill.
