What is a Chicken Caprese Sandwich?
A Chicken Caprese Sandwich is made with fresh basil leaves, chicken, and slices of fresh mozzarella cheese. This Italian Sandwich can be made in a variation of ways.
It can be made with arugula, balsamic vinegar, and more.
Ingredients
- Balsamic Vinegar
- Honey
- Boneless Skinless Chicken Breasts (filleted into 4 pieces)
- Vegetable Oil
- Kosher Salt
- Black Pepper
- Garlic Powder
- Ciabatta buns
- Butter
- Tomatoes
- Slices Fresh Whole Milk Mozzarella
- Leaves Fresh Basil

Variation Ideas
- Store Bought Bread – You can use any type of bread to make this sandwich. We have also made it with sourdough bread or focaccia bread.
- Seasoning – For amazing flavor, add in Italian Seasoning or red peppers to the marinade.
- Glaze – We love topping this caprese recipe with balsamic but you can also add a spread to the buns. Grocery Store basil pesto, aioli, or store-bought pesto mayo are great options.
- Chicken – We used chicken breast in this recipe. But you can also use boneless chicken thighs.
- Basil – We love the flavor of basil, but you can also use arugula for amazing flavor.
- Slice of Mozzarella – Top your sandwich with slices of mozzarella but you can also use shredded mozzarella.
Step by Step Instructions
Step 1 – Heat Vinegar – In a small saucepan, heat the balsamic vinegar with the honey over medium high heat. Bring the mixture to a boil. Then reduce the heat to a low simmer or approximately 10 minutes until the mixture has been reduced in half.
Step 2 – Marinate Chicken – Place the chicken breasts in a bag or bowl. Pour half of the balsamic mixture over top of the chicken. Then allow it to marinade for at least 30 minutes (or overnight). Reserve the other half of the mixture for serving.
Step 3 – Heat Grill – Preheat the grill over medium high heat then Put the vegetable oil onto the griddle.
Step 4 – Season Chicken – Then place the filleted, marinated chicken breasts on the griddle. Then season them with the garlic powder, salt and pepper.
Step 5 – Cook Chicken – Allow them to cook for 4-6 minutes until browned. Flip the chicken, cook for 5-6 more minutes. Remove the chicken from the griddle.
Step 6 – Toast Buns – While the chicken is resting. Butter both sides of the ciabatta buns. Place them cut side down on the grill and cook for 1-2 minutes to brown them slightly.
- Step 7 – Make Sandwich – They layer the chicken, mozzarella and tomatoes and basil onto the buns. Drizzle the reserved balsamic glaze on top and then the sandwiches are ready to serve and enjoy.
Recipe Tips
- Oil – You can use canola oil, avocado oil or coconut oil instead of the vegetable oil in this recipe. We just do not recommend using olive oil as it has a low smoke point.
- Grilled Chicken Breast – We recommend to filet the chicken breast to ensure they are the same thickness. This allows for the chicken to cook evenly.
- Marinate Chicken – For the best flavor, we recommend to marinate the chicken for at least 30 minutes. We think it best to marinate overnight.
- Cook Chicken – Cook chicken until it reaches 165 degrees.
How to Know when Chicken is Cooked
To ensure that you chicken is done it’s best to use an internal read meat thermometer. This kitchen utensil make sure that the chicken has reached a safe internal temperature.
When you are finish cooking your chicken, it best to use a meat thermometer. Slice your chicken to check for doneness will release the juices to early. Which may cause your chicken to be dry.
The temperature of the chicken should reach 165 degrees.
Frequently Asked Questions
If you do not have a Blackstone, you can easily cook this chicken on the stovetop. You can also cook in a grill pan.
Marinate the chicken as the recipe indicates then cook in a cast iron skillet. Once chicken is cooked, then begin layering the ingredients on the toasted bun.
If you have any caprese chicken sandwich leftovers, refrigerate the ingredients separately in airtight containers for up to 5 days.
