These Fish Foil Packets are one of my favorite “easy but feels fancy” meals. There’s something so satisfying about opening a hot foil packet and being greeted with perfectly steamed veggies and flaky, flavorful fish.

Whether I’m grilling in the summer or baking in the oven during busy weeknights, this recipe always feels fresh, healthy, and effortless and cleanup couldn’t be easier!

Ingredients

Ingredients - White Fish Fillets, slice squash, zucchini, red bell pepper, and onion, lemon, salt, pepper, Italian Seasoning, garlic powder, red pepper flakes, fresh parsley
  • White Fish Fillets – Mahi mahi, cod, halibut, flounder or sea bass all work great
  • Vegetables – Slice squash, Zucchini, Red Bell Pepper, and Onion
  • Lemon  – Slices of lemon for added flavor
  • Olive Oil – You can also use unsalted butter
  • Spices – Add salt, black pepper, Italian Seasoning, Garlic Powder and Red Pepper Flakes 
  • Fresh Parsley – Chopped, for serving

How to Make Fish Foil Packets

Step 1 – Preheat the oven to medium-high heat (approximately 350-375 degrees F).

Step 2 – Tear 4 large piece of foil into approximately 12X12 inches and spray the foil into non-stick cooking spray.

Slice squash, zucchini, red bell pepper, onions in a bowl with spices

Step 3 – In a large mixing bowl, gently toss together half of the olive oil, half of the salt and pepper, squash, zucchini, bell peppers and onions until the veggies are coated.

Step 4 – Divide the vegetables evenly and place them on the center of each piece of foil.

Step 5 – Place a fish fillet in the center of each foil packet on top of the vegetables.

Step 6 – Drizzle the remaining olive oil evenly over the fish fillets and seasoning with the remaining salt, pepper, Italian seasoning, garlic powder and red pepper flakes (if using). Place lemon slices on top of the fish.

Step 7 – Fold up the edges of the foil around the vegetables and fish to create a closed packet.

Step 8 – Place the foil packets on the grill over direct heat.  Grill for 8-10 minutes (flipping halfway through the cook time) until the veggies are tender and the fish flakes easily. 

Step 9 – Let the packets sit for about 5 minutes to cool off slightly and then they are ready to serve topped with the fresh parsley and enjoy!

  • Cooking Fish in the Oven – To make in the oven, place the foil packets on a baking sheet and bake at 350 degrees F for about 8-12 minutes until the veggies are tender and the fish flakes through. 
  • Slice Veggies Thinly – Ensures everything cooks evenly.
  • Aluminum Foil – We recommend using heavy duty foil to prevent the foil for tearing while grilling.

  • Use your Favorite Veggies – These easily can be made with any of your favorite veggies. Broccoli, Brussel sprouts, and fresh green beans would all be delicious in this recipe as well. 
  • Lemon Garlic Salmon Packets – Add extra fresh lemon juice and fresh herbs for added flavors.
  • Spicy Cajun Packets – Use Cajun seasoning and sliced jalapeños for a kick of flavor.
  • Asian-Inspired Fish Packets – Add 1 tsp of soy sauce, ginger, and sesame oil.
  • Mediterranean Packets – Add olives, cherry tomatoes, and oregano.
  • Customize Flavors: Add in garlic butter, chili-lime, or teriyaki all work beautifully for a delicious variations.
