Easy Chicken Fajita Marinade Recipe:
This Chicken Fajita Marinade recipe is loaded with flavor and easy to make. We love getting chicken fajita’s at our local Mexican restaurant so now I can easily make it at home.
This recipe is made with simple spices, olive oil and lime juice to create a delicious marinade. This marinade can use be used to burritos, nachos, tacos and more.
This marinade is quick and easy to prep and gives your chicken so much flavor. Feel free to change the seasoning for a delicious weeknight meal.
Ingredients:
Serves: 6
- Boneless Skinless Chicken Breasts
- Large Red Onion (sliced)
- Bell Peppers (sliced)
- Olive Oil
For the Marinade:
- Olive Oil
- Lime (juiced)
- Water
- Honey
- Garlic Powder – You can use minced garlic.
- Smoked Paprika
- Black Pepper
- Chili Powder
- Onion Powder
How to Make Chicken Fajita Marinade:
- Step 1 – Pound Chicken – Pound the chicken breasts until they are approximately ½ inch thick.
- Step 2 – Combine Ingredients – Add all the marinade ingredients to a mixing bowl. Whisk the ingredients together until fully combined.
- Step 3 – Add to Ziplock Bag – Add the chicken breasts in a ziplock bag. Then place the sliced peppers and onions in a separate bag.
- Step 4 – Pour Marinade – Pour part of the marinade over the pepper and onions. Cover until they are fully coated with the marinade.
- Step 5 – Pour over Chicken – Pour the remaining marinade over the chicken.
- Step 6 – Marinade Ingredients – Let the chicken, peppers and onions marinade for at least 30 minutes. Marinate for up to 8 hours (overnight).
- Step 7 – Prepare Grill – Preheat a grill over medium high heat approximately 350 degrees Fahrenheit. Then rub the grill grates with 1 tablespoon of the olive oil.
- Step 8 – Heat Oil – While the grill is preheating, cook the peppers and onions. Heat the remaining olive oil in a large skillet over medium high heat.
- Step 9 – Cook Peppers – Add in the marinated peppers and onions. Cook, stirring occasionally, for 8-10 minutes until the vegetables start to brown.
- Step 10 – Add Water – Add a small amount of water to the pan and continue to cook for 3-4 more minutes. Cook until the water cookies off and the vegetables are tender. Remove from heat.
- Step 11 – Grill Chicken – Place the chicken on the grill. Cook for 3-4 minutes per side until the chicken reaches an internal temperature of 165 degrees Fahrenheit. Be careful not to overcook.
- Step 12 – Rest Chicken – Remove from heat, let the chicken sit for at least 10 minutes.
- Step 13 – Slice Chicken – Slice the chicken on a cutting board with a sharp knife. Serve with the peppers and onions and enjoy. Add guacamole, jalapeno peppers, and fresh lime juice.
How to Bake Chicken Fajitas:
This recipe dish can be placed in the oven to bake. We love to make sheet pan chicken fajitas loaded with veggies. After Marinating the chicken and vegetables, place them on a baking sheet and bake.
We recommend baking in the oven at 350 degrees for about 20 minutes. We recommend half way through cooking time, flip the chicken and vegetables to cook both sides.
Recipe Tips:
- Marinating – When marinating the meat, make sure to allow the ingredients to marinate for at least 30 minutes. This allows for the meat to be full of flavor.
- Grilling Chicken – Allow chicken to cook on both sides. Make sure to use a meat thermometer to ensure that the chicken is cooked thoroughly.
- Chicken Fajita Toppings – Add your favorite toppings when serving the chicken fajitas. We love to top with sour cream, shredded cheese, lettuce, pico de gallo and more. We even add salsa to taste with a sprinkle of cilantro.
How to Cook Chicken Fajitas in the Skillet:
Cooking chicken fajitas in the skillet is easy and delicious. We recommend cooking in a large cast iron skillet for the best flavor. Prepare and marinate the chicken and then cook the strips in the skillet.
Serve on corn tortillas or flour tortillas for the best flavor. Make sure to serve with brown bits.

- Change the Meat – You can us this marinade for steak fajitas, chicken thighs, shrimp fajitas and more.
- Change the Seasoning – Feel free to change the seasoning. We have even added in red pepper flakes, oregano, and cumin for added flavor.
- Marinade – Feel free to add flavor by adding orange juice, soy sauce, and hot sauce to the chicken fajita recipe.
