Expert Tips

  • Coffee – Use a bold, strong coffee to ensure the flavor comes through in the finished dish.
  • Wrapping Roast – If you want to keep the chuck roast from getting too dark and crusty on the outside, try wrapping it up in some butcher paper or aluminum foil about 4-5 hours into the smoking process. This will help keep things nice and moist, and not have that dark, crispy outer layer.
  • Meat Thermometer – To ensure you chuck steak is fully cooked, make sure to check internal temperature with a meat thermometer.
