We love making Blackstone Griddle Recipes and this loaded potato chips is one of our favorites. It is an easy side dish and full of savory flavor. You can add your favorite toppings to create a crowd pleasing side.

We have made Blackstone Smashed Potatoes so we decided to thin sliced potatoes and everyone loved them. The potatoes on the Blackstone, cook tender on the flat top griddle for an easy appetizer.

These potato chips cook perfectly on the griddle. Adding the shredded cheese and seasoning takes the slice potatoes to the next level. They can easily be served as a tasty side dish or as an appetizer.

Step by Step Instructions

  • Step 1 – Preheat a Blackstone Grill over medium high heat (approximately 400 degrees Fahrenheit). 
  • Step 2 – Clean the potatoes, leave the skin on and slice them into ¼ inch thick slices. 
  • Step 3 – Add the vegetable oil to the grill and spread it out with a spatula.  

Step 4 – Place the bacon strip on one side of the grill. Then sliced potatoes on the grill next to the bacon.  Season the potato slices with salt and pepper.  

Step 5 – Cook the bacon for 4-5 minutes per side until the bacon is cooked through and crispy.  

Step 6 – Cook the potato slices for 5-6 minutes per side until the potato slices are fork-tender and golden brown.

Step 7 – Remove the bacon from the grill.  Allow it to cool until it’s not too hot to handle and crumble it. 

  • Step 8 – Turn the Blackstone Grill off.  Top with cheese and bacon.  Close the lid on the grill and allow for the cheese to melt. 
  • Step 9 – Carefully remove the potatoes from the grill.
  • Step 10 – Serve crispy potatoes topped with the sour cream and chives.  Enjoy! 

Recipe Tips

  • Clean Potatoes – Clean and dry potatoes before slicing. Slice the potatoes in about the same size so they cook evenly.
  • Oil – Use a high point oil to cook on the flat top grill. We used vegetable oil, but you can avocado oil or olive oil.
  • Cooking Potatoes – Cook the potatoes on both side for about 5 minutes over medium heat. This should allow the potatoes to be tender.

What are the Best Potatoes to Use?

We recommend using russet potatoes, but you can also use Yukon Gold Potatoes or Red potatoes. Baby potatoes are also great for griddle potato recipes.

How do you know when potatoes are cooked?

Cooking time will vary, but it took about 4 minutes on each side to cook the potatoes tender. We like to use a fork to easily see if the potato is tender.
