What is Caprese Chicken?

This Italian inspired dish can easily be made in foil with layers of chicken, fresh tomatoes, spinach and mozzarella slices. Then topped with a balsamic vinegar for a complete meal idea.

Very little prep time is needed and these chicken foil packets can easily be made ahead of time for an easy dinner idea.

Ingredients

  • Boneless Skinless Chicken Breasts
  • Kosher Salt 
  • Black Pepper
  • Store-Bought Pesto Sauce or make homemade
  • Large Tomato Slice
  • Fresh Mozzarella Cheese, sliced
  • Fresh Basil Leaves
  • Balsamic Vinegar
  • Honey

Variations Ideas

  • Veggies – Tomatoes are classic addition to this recipe. But you can also use slice grape tomatoes, roma tomatoes, or zucchini.
  • Balsamic Vinegar – Balsamic glaze can also be used to top the cooked caprese chicken foil packets.
  • Mozzarella Slice – We love using slice of mozzarella to top the chicken but you can also top with shredded cheese or parmesan cheese.

Step by Step Instructions

  • Step 1 – Preheat the grill to medium-high heat.

Step 2 – Season the chicken breasts with salt and pepper.

Step 3 – Lay out sheets of heavy-duty foil. Place one chicken breast in the center of each foil piece. Spread a generous amount of pesto sauce over each chicken breast.

Step 4 – Arrange slices of tomato, mozzarella, and basil leaves over the pesto coated chicken.

Step 5 – Fold the foil over the chicken and ingredients to create a sealed packet. Place packs on the preheated grill. Cook for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.

Step 6 – While the foil packs are cooking, combine balsamic vinegar and honey in a small saucepan. Bring to a simmer over medium heat and reduce until it thickens into a drizzle, about 10 minutes.

Step 7 – Carefully open the foil packets to let the steam escape. Drizzle the balsamic reduction over the top before serving and enjoy!
