Why You’ll Love Grilled Bell Peppers!

Carrie, the owner, with long dark hair, wearing earrings and a purple top, smiles at the camera in front of a textured, beige background.

Grilled bell peppers are one of my favorite easy grilled sides to throw on the grill. They cook quickly, need just a few simple ingredients, and the grill brings out their natural sweetness while adding a little smoky flavor.

Whenever we already have the grill going for dinner, I like to toss a few peppers on for an easy vegetable that goes with just about anything. Our favorite is to serve with Grilled Flank Steak, Grilled BBQ Chicken Breast and Blackened Salmon for a healthy, delicious meal idea!

Ingredients

Ingredients - Yellow, orange, red bell pepper, oil, and salt and pepper

If bell peppers are expensive at your store, look for bagged peppers or mixed-color packs which are often cheaper per pepper.

  • Large Sweet Bell Peppers – Use any color: red, yellow, orange, or green. Red and yellow peppers tend to be sweeter when grilled.
  • Olive Oil – Helps the peppers soften and prevents sticking to the grill grates.
  • Salt – Enhances the natural sweetness of the peppers.
  • Black Pepper – Adds a simple seasoning that works with almost any grilled meal.

How to Grill Bell Peppers

Step 1 – Preheat a grill over medium high heat until it reaches approximately 350 degrees Fahrenheit.

Step 2 – Cut the pepper into large pieces and remove the seeds from the peppers.

Step 3 – Brush both sides of the peppers with the olive.

Step 4 – Place the peppers directly in the grill grates on the grill. Close the lid, cook for 3-5 minutes until the peppers are charred. Flip them over and cook the other side for an additional 3-5 minutes.

Tips for Success

  • Cut peppers into large pieces. Smaller pieces can fall through the grill grates.
  • Don’t skip the oil. It prevents sticking and helps the peppers caramelize.
  • Use medium-high heat. This allows the peppers to char slightly while staying tender.
  • Leave the lid closed. This helps the peppers cook evenly and faster.
  • Great for meal prep. Grill extra peppers to use in fajitas, sandwiches, pasta, or grain bowls later in the week.

Variations & Substitutions

  • Slice into Strips – Instead of large pieces, slice peppers into thick strips for fajitas or grilled vegetable platters.
  • Add Garlic Flavor – Toss the peppers with garlic powder or minced garlic before grilling.
  • Use Different Oils – Avocado oil or vegetable oil work well if you don’t have olive oil.
  • Add Balsamic Finish – Drizzle with a small amount of balsamic glaze after grilling for extra flavor.

Storage, Leftovers & Freezer Instructions

  • Refrigerator: Store leftover grilled peppers in an airtight container in the refrigerator for up to 4 days.
  • Reheating: Reheat in a skillet over medium heat, microwave in short intervals, or warm them briefly on the grill.
  • Freezing: Grilled peppers can technically be frozen, but they will be softer after thawing. They are best used in soups, sauces, or casseroles after freezing.

Frequently Asked Questions

Do you grill bell peppers with the skin side up or down?

Either side works, but starting with the skin side down helps the peppers char quickly and develop smoky flavor.

What temperature should peppers be grilled at?

Medium-high heat around 350°F works best so the peppers soften while getting light char.

How long does it take to grill bell peppers?

Most peppers take 6–10 minutes total, depending on the size of the pieces and grill heat.

What goes well with grilled peppers?

These vegetables pair well with grilled chicken, steak, burgers, sausages, fajitas, tacos, and rice bowls.
