These Chicken Fajitas cook so tender and juicy on the grill or in a pan on the stovetop. Fajitas are a delicious dinner idea and we make them often and they are perfect for feeding a crowd. It is one of our favorite Grilled Chicken Recipe.

Why We Love Grilled Chicken Fajitas

We love making chicken fajitas at home because it is my favorite menu item at my favorite Mexican Restaurant. But making them at home saves me time and money and I can easily change the seasoning and ingredients.

It is a meal that we can prepare quickly on a busy night that is full of flavor! Whether I make them on the grill, sheet pan or on the stovetop they always turn our perfectly and my entire family loves when they are on the menu.

Ingredients

Ingredients - Chicken breasts, fajita seasoning, olive oil, lime, red bell pepper, yellow bell pepper, green bell pepper, white onion, flour tortillas
  • Boneless Skinless Chicken Breasts – You can also use chicken tenders or chicken thighs
  • Fajita Seasoning – You can use packet seasoning blend, but you can also make Homemade Fajita Seasoning.
  • Olive Oil – Use any oil that you prefer just make sure to use a high smoke point oil such as vegetable oil or avocado oil
  • Lime – We like to use fresh lime juice
  • Red Bell Pepper, Yellow Bell Pepper, Green Bell Pepper, White Onion – Slice the vegetables about the same size so they cook evenly.
  • Flour Tortillas – We recommend using the fajita size tortilla. You can also make Homemade Flour Tortillas.

Variations Ideas

  • Spices – You can also use Taco Seasoning or combine ½ teaspoon of garlic salt, garlic powder, cumin, chili powder, oregano, and paprika. The combination of these spices give the chicken the best flavor. More spices can be added to taste.
  • Tortillas – We like using flour tortillas but you can also serve with corn tortillas or any tortillas that you prefer.

How to Make Grilled Chicken Fajitas

Step 1 – In a small mixing bowl, whisk together the olive oil, lime juice and fajita marinade.

Step 2 – Place the chicken in a plastic bag or medium bowl and pour the chicken fajita marinade on top. Let the chicken marinade in the refrigerator for at least 30 minutes.

Step 3 – While the grill is preheating, cut each of the peppers into quarters and remove the seeds and membranes and slice the onions into thick rings.

Step 4 – Place the chicken, peppers and onions on the grill. Grill for 15-20 minutes, flipping them all halfway through the cook time until the chicken is cooked through (reach an internal temperature of 165 degrees F and the peppers and onions are browned). 

  • Step 5 – Remove the chicken, peppers and onions from the grill and let the chicken rest for 5-10 minutes.  
  • Step 6 – Warm the tortillas on the grill for 1 minute per side while the chicken is resting. 
  • Step 7 – Slice the chicken, peppers and onions. Serve over the warmed tortillas with your favorite fajita toppings and enjoy!  

Expert Tips

  • Cooking Chicken – Cooking time will vary depending on the thickness of the chicken. We recommend to use an instant-read meat thermometer to ensure that the chicken is cooked through before removing it from the grill.  
  • Prepare Grill – Preheat a grill over medium high heat. Clean the grill grates thoroughly and rub them with oil to keep the chicken and vegetables from sticking to the grill.  
  • Marinating Chicken – We recommend marinating the chicken for at least 30 minutes and up to 8 hours. When removing the chicken from the marinade, gently shake off any excess marinade before placing on the grill.

What to Serve With Chicken Fajitas

Chicken Fajitas make the best dish to serve as a weeknight meal or to feed a crowd. We love to serve with Mexican Rice, Refried Beans, and Blackstone Queso.

I have even like to setup a fajita topping bar so everyone can add their own. Setup small bowls of sour cream, salsa, fresh cilantro, chopped yellow onion, shredded cheese, and guacamole.

Are Fajitas Better on Grill or Skillet?

How you cook fajitas is a personal preference depending on the flavor that you are wanting. Cooking fajitas on the grill gives you a smoky flavor and cooks quick and easy. If you do cook on the stovetop we do recommend cooking the fajitas in a cast iron skillet to evenly cook the fajitas with the best sear. It also provides the best heat retention and gives a classic sizzling sound.

Should I Cut Chicken Before or After Cooking Chicken Fajitas?

In this recipe, we cook the chicken filets without cutting but if you are cooking the chicken in a skillet, you can slice the chicken before cooking. Slicing the chicken does allow it cook quickly and prevents overcooking.

Storage and Freezer Tips

  • Storing – Store the leftovers in an airtight container for up to 5 days in the refrigerator.
  • Freezer – This is a great recipe to double so you can freeze the leftovers. After the chicken strips have cooled, place in a freezer safe container for up to 3 months. Thaw in the fridge overnight when ready to serve again.
  • Reheating – Reheat the leftovers in the microwave or in an preheated oven at 350 degrees for about 10 minutes in a baking dish.
