  • Butter Spread – These are best served fresh.  You can use butter instead of mayonnaise in this recipe if you prefer. 
  • Cheese – These sandwiches are great with any of your favorite type of cheese.
  • Oil – Use any oil with a high smoke point. Vegetable oil, canola oil, coconut oil or avocado oil will all work great in this recipe.
  • Bread – You can easily make this sandwich with your favorite type of bread. We used sourdough bread in this recipe, but Artisan bread is amazing or Texas Toast. We like a thicker bread when cooking on the griddle.

How to Make a Bacon Grilled Cheese on Blackstone Griddle

  • Step 1 – Preheat the Blackstone Grill over medium high heat (approximately 400 degrees F).

Step 2 – Place bacon slices on the Blackstone Grill on one side on the griddle.  Cook the bacon until the bacon is crispy.

Step 3 – Spread the mayonnaise on the side of each slice of bread.  Place bread on the grill then op with 2 slices of the cheddar cheese, 2 slices of the bacon, 2 slices of the pepper jack cheese and the remaining slices of bread.

Step 4 – Cook both of the sandwiches over medium high heat until golden brown (4-5 minutes).

Step 5 – Flip the sandwiches and cook the other side for 4-5 more minutes until golden brown. Remove the skillet, cut in half and enjoy.

How to Cook a Bacon Grilled Cheese on the Stove Top

You can easily make this Bacon Grilled Cheese on the stove top. We recommend a cast iron skillet as the results are about the same as it is cooking on the Blackstone.

  • Butter one side of the bread.
  • Place bread in large skillet that is hot and melted butter
  • Spread mayonnaise on the outside bread.
  • Top the bread with bacon and cheese.
  • The top with another slice of bread
  • Cook about 3 minutes on one side and then flip to cook the other side.
  • Remove from pan and place on plate.
  • Slice, serve and enjoy

  • 4 Slices Sourdough Bread
  • 2 Tablespoons Mayonnaise
  • 4 slices Bacon
  • 4 Slices Cheddar Cheese
  • 4 Slices Pepper Jack Cheese
  • 1 Tablespoon Avocado Oil

Instructions

  • Preheat the Blackstone Grill over medium high heat (approximately 400 degrees F).
  • Place bacon slices on the Blackstone Grill on one side on the griddle.  Cook the bacon until the bacon is crispy.  Move the bacon from the grill to a plate lined with a paper towel to soak up the excess grease.
  • Spread the mayonnaise on the outside of each slice of bread.
  • Drizzle the avocado oil onto the Blackstone grill. Place 2 slices of the bread mayonnaise side down onto the grill.  Top with 2 slices of the cheddar cheese, 2 slices of the bacon, 2 slices of the pepper jack cheese and the remaining slices of bread.
  • Cook both of the sandwiches over medium high heat until golden brown (4-5 minutes).  Flip the sandwiches and cook the other side for 4-5 more minutes until golden brown.
  • Remove the skillet, cut in half and enjoy!

    Before building the sandwich, bake the bacon in the oven on a flat pan. Cover it with brown sugar and finely chopped pecans. The sugar will caramelize and hold the pecans on the bacon. I bake it at 325 (pre-heated) for around 15 minutes or until done.
