A large part of my childhood was eating bologna sandwiches with a side of potato chips. My mom always made it so delicious topped with cheddar cheese and mayo.
This Blackstone Bologna Sandwich is a twist on that classic sandwich, which is how I make it for my kids. We love making Blackstone Recipes because of the flavor and the large cooking surface.

Why this Recipe Works
We love making this bologna sandwich on the Blackstone because of the smoky flavor and the crispy edges.
Because of the large cooking surface, I can cook all the bologna at once instead of working in batches.

- Butter
- White Bread
- Slices Bologna (thick slices)
- American Cheese
- Yellow Mustard

Variations
- Bread – You can serve this beef bologna on white bread but you can also use rye bread, sourdough bread or thick cut Texas Toast.
- Baloney Sandwich Toppings – Feel free to add your favorite toppings and condiments. Tomato, Iceberg Lettuce, pickles, onions, ketchup, and jalapenos are all great options.
Step by Step Instructions
- Step 1 – Preheat a Blackstone Grill over medium high heat (approximately 400 degrees Fahrenheit).
- Step 2 – Melt the butter on the grill and spread it out with a spatula.
- Step 3 – Then place the slice of bread on the grill to toast it. Remove from the grill once the bread is golden brown.
- Step 4 – Peel the outside red rings off the outside of each of the Bologna slices. Cut an approximately one inch slits into the edge of the Bologna at 4 even places around the bologna slice. Then cut a ½ inch slice in the center of the bologna slices.
- Step 5 – Lay the bologna slices onto the grill and cook for 2-3 minutes until browned in a single layer. Flip and cook the other side for 2-3 more minutes until browned.
- Step 6 – Layer 2 slices of bologna on top of each other and top with a slice of cheese. Heat for a few minutes to melt the cheese.
- Step 7 – Spread the mustard onto both sides of the bread and add the hot bologna and cheese.
- Step 8 – Serve warm and enjoy!
Recipe Tips
- Preheat Griddle – Make sure to preheat griddle before toast bread. We like to spread butter on the griddle to prevent the bread from sticking.
- Cooking Time – Cooking time will vary depending on your bologna slices and how thick they are.
What to Serve with Bologna Sandwich
These bologna sandwich is delicious served with your favorite side dish. You can serve with a side salad, Blackstone French Fries, or Blackstone Broccoli.

How to Make on Stovetop
If you prefer, you can make this fried bologna sandwich on the stovetop. We recommend cooking in a large skillet or cast-iron skillet over medium heat.
