Ingredients for Carne Asada Marinade

Marinade Ingredients - Jalapeno, minced garlic, cilantro, orange, lime, olive oil, apple cider vinegar, chili powder, paprika, cumin, salt, pepper
  • Skirt Steak  – We used skirt steak in the recipe but you can easily make these tacos with flank, sirloin steak or sliced chuck roast. 
  • Avocado Oil – I used avocado oil but you can easily use any oil with a high smoke point. Vegetable oil, coconut oil or canola oil all work great in this recipe.
  • Jalapeño – Seeds removed and cut into large pieces. You can also use serrano peppers
  • Cloves Garlic – You can also use garlic powder
  • Cilantro – Chopped leaves and stems
  • Orange and Fresh Lime Juice – Adds citrus flavor. You can also use Fresh Lemon or orange juice

How to Make Carne Asada on the Blackstone Griddle

Step 1 – Slice the skirt steak and then dice it into small bite size pieces.

Step 2 – Place all the marinade ingredients in a blender or food processor blend until smooth.

Step 3 – Place the steak in a large bowl or ziplock bag. Cover with the marinade. Cover and refrigerate for at least 1 hour (but not more than 8 hours).

Step 4 – Preheat the Blackstone griddle over medium-high heat (approximately 450 degrees F). You want the griddle to be hot to get a good sear on the steaks. Spread the oil out onto the Blackstone grill.

Step 5 – Once the oil is hot, place the steak on the Blackstone grill on top of the oil. Let them cook for 2-3 minutes and do not move them to get a good sear on the steak. Use a spatula to flip the steaks onto a separate section of the grill. Then cook the steaks for 2-3 more minutes to sear the opposite side of the steaks.

Step 6 – Add the corn tortillas and cook them for 1-2 minutes per side to warm them up.  Then it’s time to assemble the carne asada street tacos. Use 2 tortillas per taco. Spoon the meat mixture onto the tacos. Serve with your favorite toppings and enjoy!  

Expert Tips

  • Griddle – Before placing the steak on the griddle make sure the flat top grill is hot and oil has been added. This helps to create the best texture and helps to evenly cook the steak.
  • Slice Steak – Dice the steak in about the same size pieces so it cooks about the same time.
  • Cooking Steak – While cooking the steak make sure to allow it to cook for about 2 minutes before moving it.

  • Veggies – Add Grilled Peppers and Onions for a delicious twist and added flavor
  • Cojita Cheese – We love to serve with cojita cheese and drizzle of crema for extra richness
  • Marinada – Change the ingredients in the marinade for what you prefer. We have used Chipotle Steak Marinade for a delicious twist.

Carne Asada can be served in different ways. Here are a few delicious ways to enjoy this flavorful meat.

  • Tacos – Serve the meat in corn tortillas with your favorite toppings such as sour cream, Guacamole, fresh cilantro, jalapeno, hot sauce, smoky salsa and onions
