Variations Ideas

  • Change the Meat – Feel free to change the meat when making this recipe. You can make it with bacon, diced ham, or chicken. Any combination works or use what you have or prefer.
  • Veggies – This shredded hash brown mixture is delicious with added veggies. We love to add in bell peppers, mushrooms, and more. I usually add in vegetables I have leftover from the week. You can easily load up the hash browns with simple ingredients found at the grocery store.
  • Toppings – Feel free to add toppings to the hashbrowns when serving. Season with salt and pepper and then top with sour cream and salsa.
  • Eggs – We did scramble egg but you can also make this recipe with a fried egg.
  • Cast Iron Skillet – If you do not have a Blackstone griddle, you can easily make this recipe on the stovetop. We recommend making it in a cast iron skillet.
  • Seasoning – Feel free to change the seasoning to what you prefer. You can add in season salt, garlic powder and more.

Step by Step Instructions

  • Step 1 – Heat Griddle – Preheat the Blackstone griddle over medium heat (to approximately 350 degrees F). Spread half of the butter out onto the griddle with the spatula and let it melt.

Step 2 – Cook Onions – Add the diced onions to the grill. Then sauté them for 3-4 minutes until the onions are soft.

Step 3 – Add Butter – Add the remaining butter to the grill and allow it to melt. Spread the hash browns out on the grill in a single layer on one side of the grill with the onions.  Toss until they are combined and then allow them to sit for the hash browns to brown.

Step 4 – Add the Meat – On the other side of the grill.  Brown the diced sausage links.

Step 5 – Combine Eggs – Whisk the eggs with the milk, salt and pepper together in a bowl. Add them to the side of the griddle and scramble them on the grill.

Step 6 – Add Hashbrowns – Allow the hash browns to cook for several minutes. Do not move them until they are browned on one side.  Flip them with a large spatula and cook them for several minutes on the other side until browned.

Step 7 – Cook Hashbrowns – Then place the scrambled eggs, sausage and shredded cheese on half of the hash browns.  

  • Step 8 – Flip – Flip the other half of the hash browns on top.  Continue cooking until golden brown.
  • Step 9 – Turn to Low – Turn the heat on the griddle down to low. Then heat for a few minutes until the cheese is melted. 
  • Step 10 – Serve and Enjoy – Remove from the grill.  Serve warm and enjoy.

  • Prepare Griddle – Before adding ingredients to the griddle, make sure that it has been preheated and butter added. This helps to cook the ingredients with the perfect texture. It also prevents it from sticking to the griddle.
  • Spreading Hashbrowns – When cooking hash browns on the Blackstone make sure to spread in a single layer. Allow them to sit which creates a crispy texture.
  • Combining the ingredients – Before combining ingredients make sure the hash browns have browned to your preferred crispiness. Then turn the griddle on low so that the cheese melts and everything cooks.
  • Serving – These hash browns are best served warm.

What are the best type of hash browns to use?

We like using shredded hash browns to make this recipe. But you can also use fresh potatoes. If you are preparing ahead, place the peeled potatoes in water so they do not brown. Then before cooking make sure to towel dry them.

Why are my Hashbrowns soggy?

When cooking hashbrowns make sure you allow them to cook before flipping. If you flip them to soon then that can cause them to be soggy.

Can I Make Hash Browns in Advance?

Hash browns are best made when ready to serve. If you try to reheat them them may not be as crispy as when they were first being made.

  • 1/2 Onion finely diced
  • 1/4 cup Butter
  • 1 Pound Breakfast Sausage Links sliced
  • 6 Eggs
  • 1/4 cup Milk

  • 1/2 teaspoon Pepper
  • 2 cups Shredded Cheddar Cheese
