  • Boneless, Skinless Chicken Thighs – Feel free to use chicken tenders or chicken breast to make this recipe.
  • Garlic Powder – You can also use fresh garlic cloves
  • Oil – Use oil of your choice

How to Make Buffalo Chicken Thighs

  • Step 1 – Preheat the grill over medium high heat (approximately 400-425 degrees F) and rub the grill grates with oil to prevent the chicken thighs from sticking to the grill.

Step 2 – Dry the chicken as much as possible and then coat the chicken with the salt, black pepper and garlic powder.

Step 3 – Place the seasoned chicken thighs on the grill over direct heat.  Cover and cook for 5-7 minutes per side until the chicken reaches an internal temperature of around 160 degrees F.

Step 4 – Then baste both sides of the chicken thighs with the buffalo sauce and cook each side for 2-3 more minutes until the chicken reaches an internal temperature of 175 degrees.

Step 5 – Remove from the grill.  Let the chicken rest for 5-10 minutes before serving. Then the chicken is ready to serve and enjoy!

  • Oil – Use an oil with a high heat rate to oil the grill gates. Avocado oil, vegetable or coconut oil all work great.
  • Cooking Chicken – Chicken breasts can be used in this recipe instead of chicken thighs. If using chicken breasts, grill until the chicken reaches an internal temperature of 165 degrees F to prevent them from drying out. 
  • Skin-On Chicken Thighs – For a crispy skin, you can keep the skin on the chicken thighs.
  • Adding Buffalo Sauce – Grilled chicken for about 5 minutes on each side before adding the buffalo sauce. This ensure that the chicken is cooked and gives the chicken then best flavor.
  • Cooking Methods – Make Baked Buffalo Chicken Thighs in the oven on a baking sheet pan at 400 degrees for about 20-25 minutes. Make sure to use a meat thermometer to ensure the chicken reaches an internal temperature of 165 degrees before serving.
